We had our rehearsal dinner at Ohana at the Polynesian - it worked out really well. If you are lucky your EM will make the prority seating arrangements for you - but they don't have to do it (our's made us make the ressie's!) If you end up having to make the reservations for priority seating on your own, call in on the exact day that they begin taking prority seating requests, because you will be limited to certain times (and you will also have to go through group dining reservations, so I'd call ahead and get the appropriate phone numbers). We were limited at Ohana to the first or the last dinner seating for a group of about 15 adults. I think that Ohana or one of the other resort locations is great for a rehearsal dinner - you could also try for Chef Mickey's if you're interested in a character dinner. I'd stick to a resort location, because if you choose an in-park location, you assume that your guests will have a ticket for admission (some of our guests didn't go to the disney parks at all!) You may want to have a couple of restaurants in mind, just in case your first choice doesn't work out.
