I was thinking about staying the nite before and the nite of the wedding at the Beach Club Villas and get a 1 bdrm. I saw on All Ears In Room Dining that they have Hospitality Platters (for groups of 10). Also all of our family that's coming to the rehearsal dinner are very close to the family. So I was thinking of doing our rehearsal in the evening, then having pre-ordered food delivered and hanging out in the room while letting the younger peeps go to the pool if interested. After all that's how both sides of our families celebrate most (casual) holidays. Does that sound cheap or whatever? We're trying to save where we can without skimping on the actual wedding.

Chips and Dip - potato chips or nacho chips and your choice of dips: ranch, blue cheese, salsa, or French onion $14.99

I am also going to pick up a big salad, sandwich stuff to make a platter, and wine & sodas from Publix and prep those earlier in the day. I think we're going to budget about $200 for the dinner items.
 

I think it's a terrific idea, but here's one money saving suggestion. Since you're going to Publix anyway, why not get all the food from there?
I'm positive you can get LOTS of salsa and chips for less than $14!

You could probably order veggie and cheese trays ahead of time and pick them up the morning of your rehearsal, then just keep them in the fridge, since you'll be in a 1 bedroom you'll have a full kitchen!

I think the idea sounds great. One thing I would caution you on is sending people to the pool who aren't staying at the hotel. Sometimes they can be strict on that. I'd hate for you to hype that portion up, and then they couldn't go because they aren't staying there. People will say they've never had problems with that, etc. but it would just take them getting strict on your day to put a damper on things.

Publix for trays would be a good idea. If you're going to have a car, and there is a Sam's convenient (and you're a member, of course) their veggie trays are 10 bucks, and would probably serve about 10 people. There are some great options through grocery stores. If you can figure out exactly what is offered ahead of time to order it, that could be a great option for you.
