Recommended ADR's and things I don't know please...newbie :)

What are the "ideal" dining recommendations to make 60 days out? For instance I read you could eat at WTC during parade times and wait for a aisle table. What would be the ideal time to make a reservation and wait for those specific tables? Are there other things out there I'm not aware of? I just happened to run across this.

We definitely want to do Plaza Inn characters and Blue Bayou FP dinner. Do you have any time recommendations for those? I think breakfast at Plaza Inn stops at 11 so is the latest reservation 10:30 or is 11 available? Hard to tell online and I'd rather wait to crowds start getting built up rather than sacrifice park time. UNLESS there is a character breakfast I haven't run across that is pre-park opening somewhere?

Anything I should know being a newbie is greatly appreciated! And any recommendations or favorites of yours as well I'd love to hear about.

I do have to say this is so much less stressful planning that WDW! A breath of fresh air!
 
You can actually do the Minnie & Friends Breakfast at Plaza Inn before park opening, usually. If the park opens at 9am, I think the first reservation starts at like 8:10 am...so you could get breakfast out of the way, be done by like 9:30 and only lose 1/2 hour of park time. Check on the date you want to go and see what the earliest reservation is...it's usually pre-park opening and they let you in a special entrance at the main turnstiles by looking at a reservation list they have and checking your name, etc.
