I am planning a trip to WDW in late May/early June. In the past we have done a fair number of tableservice restaurants but for various reasons I plan on sticking to counterservice/snacks during this trip. I will be travelling solo and plan on probably one day at each park and the remaining days I will visit some of the resorts and Disney Springs.

So what are your favorite snacks or counterservice meals (not a huge eater)? I am trying to stick to a budget so I would prefer snacks/meals with a reasonable price. I don't need massive portions but if I spent over $12 or so I would like to be somewhat full after (i.e. more than two small bites). Anything I absolutely need to try?

EP: Flower & Garden food booths; anything at Les Halles
DHS: buffalo chicken grilled cheese from ABC Commissary
AK: Anything at Nomad Lounge
MK: spicy chicken/waffle sandwich at Sleepy Hollow

I agree with the booths at Epcot and Spice Road Tables only has small bite plates.
DHS I tend to go to HBD Lounge, you probably aren't going to get anything for $12 but you will be full when you are done. Or, you could walk over to the Dolphin at eat at The Fountain. A lot of people like the QS in Galaxy's Edge, not a fan.
AK I agree with Nomad Lounge. If I have already eaten there during the trip, I tend to just get a chicken fried rice at the Yak and Yeti QS, more than enough food for me. A lot of people swear by the QS in Pandora, again I'm not a huge fan.
MK This one is tough, I usually leave and either go back to my resort (which happens to be The Dolphin most of the time) or go to one of the resorts on the monorail loop. Poly has a pretty good QS and GF does as well. I do like the waffles at Sleepy Hollow but not the spicy chicken one, I get the fruit and nutella one.

DHS: Ronto wrap, charcuterie and/or giant pretzel with beer cheese at Baseline
MK: Nutella waffle at Sleepy Hollow, Dole Whip float
Epcot: Festival booths, Cantina de San Angel, Les Halles
AK: Satuli, Nomad Lounge, Harambe Market

I think I'm the only person who isn't a fan of the festival booths at Epcot. It feels to me like they are expensive for the small portion size. If you like what you're eating, the cost might not bother you. But if you are trying something new and you don't like it, you might feel like it was not a good use of your money.

My snack is usually a cupcake after lunch. Definitely not cheap, but it always makes me happy so the cost doesn't bother me.

I cannot recommend Nomad Lounge at AK strongly enough. In particular, the gluten-free churros are a delight (even for me, who isn't gluten-free). I don't even know if they have regular churros...that's how good the GF ones are. The menu changes a lot, but the last time we went, they had some outstanding small plate choices. The chili dog was particularly good.

We didn't do many ADRs this trip. Our favorite bites were the cheeseburger spring rolls in MK, chicken dumplings in AK, bar food at Tambu Lounge (ribs are yum!) and all of Spice Road's dishes.

Whew can you get the chicken dumplings in AK? Sound delicious!

Some QS sell sides (besides fries) separately for a few dollars. I like fried rice or noodles at the Asian counter in Sunshine Seasons (at The Land in Epcot), mac and cheese at Regal Eagle (IMHO a side is enough for a small lunch; it's pretty filling on a hot day), or breadsticks at Pizzafari (some of the other pizza places may have them as well).
