Recipes for Summer Salads without Mayo

I'm having a BBQ on saturday with friends whose child is allergic to eggs - so no mayo. I'm going to make a toss salad, but would love some other recipes for summer salads without eggs or mayo - thanks!
 
This is my new favorite!

Cucumbers - cut up bite size
Grape tomatoes
Feta cheese
Balsamic dressing

Sorry, but I don't have specific quantities and I make it by what looks "right."
I believe this is a weight watchers recipe if you don't use too much feta.

It's sooooo good!
 
I make a really good taco salad that is so good and so easy.

1 lb ground meat(I use ground turkey)

1 package taco seasoning

lettuce

1 tomato chopped

1 green pepper chopped

1 red onion chopped

1 can black olives sliced

1/2 bag original Doritoes

1 8oz bag shredded cheese(cheddar, taco mix or whatver you choose)

1 bottle Catalina dressing

Cook ground meat with taco seasoning, set aside. In a big bowl mix all other ingrediants together except for Doritos and dressing. Right before serving crsuh up the Doritos and add them and the dressing.



There's also the simple pasta salad with whatver veggies you like and a bottle of Italian dressing.
 

I like fresh string beans mixed with black olives and chick peas. Blanche the string beans quickly and put in cold water. Mix with olives and chick peas and dress with a balsamic vinaigrette.
 
Strawberry Spinach Salad

2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
1/2 cup olive oil
1/4 cup distilled white vinegar
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon minced onion
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
1/4 cup almonds, blanched and slivered

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
 
Pasta salad is always great for Summertime parties & BBQ's.

Cook & cool 1lb of pasta (usually rotini)
Cut sharp cheddar cheese, pepperoni, salami, black olives, tomatoes, onion and any other combination of veggies you like, into small pieces and add to the pasta
Add Italian salad dressing & mix

Mix this right before the party and refrigerate. The pasta will soak up the dressing, leaving it tasting a bit dry if you mix it too early.
 
A BBQ I went to had a cold pasta salad that was a bottle of catalina dressing & a jar of Sweet Pepper Relish. Add what other stuff you want to that like onions, olives......

Be prepared to tell people what it is though because it looks like cold pasta with a hint of cold red spaghetti sauce and people were not touching it. Once told, everyone thought it was delish and wanted to know how to make it. :rotfl:

My girls love this in the summer

tri-colored pasta noodles, cooked (obviously)
grape tomatoes, quartered
cucumbers, diced
sliced black and green olives
sharp cheddar cheese, cubed
pepperoni, diced
bottle of Zesty Italian dressing.

I was going to suggest something very similar.

There's a salad a lot of Italians make with string beans, potatoes and onions dressed in vinaigrette. I don't make it with recipe per se. I just blanche the string beans (the snipped French ones Costco sells are perfect for this) and boil the potatoes until just tender. You use any potato you have; if they're reasonably priced, I like to use small red-skinned taters. For the onion, go with a sweet one like Vidalia or Mayan Gold and slice them thin.

Dress with any Italian. I like to make my own dressing with olive oil, wine vinegar, oregano, garlic salt and pepper, but Good Seasons Italian is very good with this too.

Yes, I make my own dressing also :thumbsup2 We try to avoid salt so I never used bottled dressings. I use balsamic or white balsamic vinegar, olive oil, oregano, basil, garlic powder and fresh black pepper!
 
Just thought of something else you might like to try:

defrost frozen broccoli florets, do not cook
slice mozzarella cheese
slice heirloom tomatoes

layer the above and drizzle with olive oil and add a sprinkle of fresh basil

I just made a variation of this...love it!

I have also been loving the Panera Strawberry salad. It consists of:

Romaine lettuce (great mixed with spinach too)
Sliced Strawberries
Blueberries
Pineapple tidbits (fresh is better)
Mandarin Oranges
Chopped pecans
Poppyseed dressing

It's addicting! I ate it for lunch for a week straight!

pkg of broccoli slaw
one granny smith apple, diced
1/4 c raisins
dress with Vidalia onion salad dressing

just before serving, top with toasted crushed pecans

How about a nice fruit salad.. Grapes; melons; strawberries; cut up apples; etc. ?
 
Another of my recent favs is a Chicken Berry Salad

Season & grill cut up chicken and let cool
Add to mixed greens, cut up strawberries & toasted pecans, & strawberry vinaigrette dressing
