Recipes/Food Ideas??

Okay, now that the new-to-us popup is home I am starting to think about meals. We have a microwave, crock pot, griddle, George Foreman grill, and a toaster oven. Let me hear all your favorite recipes/food suggestions, please!

I like those foil bags for camping.

Chopped up white potatoes or sweet potatoes, sweet onion and red or yellow bell pepper, toss with olive oil and spices (or better yet basting oil), throw in the bag, and bake on the grill on low until potatoes are tender.

Then grill up a steak or chicken with it. Voila!
 
I cook a pork roast in the crock pot overnight and use boil in a bag rice with the juice added from the crock pot to make "greasy rice". (add enough of the juice from the crock pot to cover the rice, cook 10 minutes in the microwave) On day one, pork roast with rice and green beans from the can. On day two, I put the pork roast back in the crock pot (shredded) on low and add a jar of Melvins bbq sauce. Bbq sandwiches with baked beans.

These sound great. I do spend a lot of time at popupexplorer, but the cooking board is extremely slow and most recipes call for a Dutch Oven and I have no idea how to use one.
 
A hot grill - a thick steak - a cold beer. Doesn't get any better than that. No recipe necessary. :moped:
 
I am all for quick & easy, but it still has to be delicious. I often make awesome french dips in the crock while camping, pulled pork sandwiches in the crock, steak on stick, & we grill meat a ton-of course.

French Dips
Eye of round roast or similar
2 envelopes of Lipton Onion Soup (Dry)
1 can of beer
1 can of beef broth

Poke roast, cover in garlic powder, put all ingredients in crock. Cook on low for 8-10 hours. When meat is done, serve on Orlando French Rolls, dip in juice from crock. Sooooooooo yummy. I even take the left overs & toss with bbq sauce. A 2 for 1! The alcohol cooks off, so it is ok for kiddos to indulge as well. :flower:
 
A dutch oven is just a 4-6 qt. pot with a lid...what you'd make a pot roast in. Easy ideas...tortellini soup...one jar of spaghetti sauce, equal amount of beef broth...boil and add one package of cheese tortollini, serve with bread. Spaghetti with olive oil, garlic, and fresh grated parm...have with a salad. Baked potatoes with chili, cheese, broccoli, sour cream, whatever combo suits. Eggs scrambled with browned hamburger and jalapenos, served with flour tortillas, salsa, and grated cheese if desired. Bean burritos...refried beans heated with/without browned hamburger and salsa, grated cheese, onions, olives, whatever. Chef salad, enough said. Real or fake seafood on bagged salad, with bread. Quesadillas...flour tortillas with whatever cheese, meat, and veg you want, grilled, served with salsa and guacamole...if you like guacamole.
 
My family loves when I make chicken soft tacos when we camp. I use 1lb pkg of boneless, skinless chicken, 1pkg taco seasoning, 2Tbsp olive oil, about 1/8cup water. Put in crock pot on low for 6-8hrs or high for 4hrs, chicken will shred really easily. Serve with flour tortillas, cheese, lettuce and anything your little heart desires. Delicious! :goodvibes
 
A dutch oven is IMO the best piece of camping equipment ever invented!!! It is basicly a cast iron pot with legs and a lid. It's used by heating it was charcoal, both underneath and ON TOP. One of the questions I love is "What do eat while camping?" My answer is "Anything you want!" Anything you can make at home in your kitchen, you can make while camping. Plus with all of the goodies you have in your pop up, you should have no problem cooking anything. I definatly recomend if you are going to be doing camping other than just at WDW that you invest in, and learn how to use a dutch oven. It can be used as a oven, as the name implies, as a pot, a grill and so many other uses that I couldn't think of right now. I could start listing everything I've ever made, or seen made in a dutch oven, but I'd never stop! If you are camping more than just at WDW, and dutch oven is a must!!!!

Definitely the brats, but you have to have to get the 10 pc. chicken meal with biscuits and coleslaw and fries from Trail's End (only $19.95!) to go with them. :teeth:
 
I like to make things ahead of time to take camping with us.

I make the filling for tacos and freeze. Then when I'm ready to use all I have to do is thaw and serve with our favorite toppings.

I also make meatballs and freeze with homemade spagetti sauce. Thaw/heat, throw them into a grinder roll and sprinkle with cheese.

I usually make a large batch of spagetti sauce and freeze. On longer trips I may bring meatballs for subs and a bag of spagetti sauce for spagetti.

Bichon Barb suggested the foil bags with veges. We have done the same except we have used Italian Dressing over the veges.

Crock pot idea: cheap cut of steak (we use venison), 1/4 cup water and 1/2 to whole bottle of barbeque sauce. Cover and cook all day on low. Shred the meat, add shredded cheese and serve. I think someone else suggested this as well.

For trips when we have to eat while traveling. I'm big on little to no prep time and no dishes. Luckily my husband and daughter aren't fussy. Something quick to throw together.....I buy the prepackaged salad (greens only) to use in sandwiches, precooked Oscar Mayer bacon or precooked chicken, slice a tomato to make either BLT's, or chicken wraps. You can use just about any dressing you want on the chicken wraps to create the flavor you want. My husband likes Caesar's and I like taco sauce. Two different tastes with little prep time. I usually prewash the tomato(s) at the house. The only cleanup you have is the knife used to slice the tomato.

I never really thought about cooking too much at FW. I seem, though to crave BLTs while there. I am majorly dieting though right now trying to lose that 30 pounds that creeped up on me over the past 2 years. :earseek: We always just got the typical hot dogs, bread, cheese, frozen stuff for pancakes and waffles and my kids' favorite "munchie munches" (peanutbutter and fluff sandwiches). We did the corn on the cob, burgers thing, but that's about it. I think I need to go buy a crock pot. Do you all leave it on all day while at the parks? What a great thing to come home to. I especially love pulled pork sandwiches.
But, back to my diet. LOL one thing I really love about camping at FW is that I can have all the fresh fruit I want. Very hard to find in a hotel. My favorite is to buy those delicious Georgia peaches on my way down. Peach juice everywhere and then it makes for great sundae topping sliced up with a little sugar. :earboy2:
 
I have found what i think is a great product for camper's it is an uncooked bacon that until open doesn't need refridgeration. This is also the best tasting bacon i've ever had and it doesn't shrink. I first found it on a HSN and then went to there direct website as it's not sold in stores. The brand is father's country hams. Hope this helps other that have limited fridge space but be warned my DH won't eat the regular store type anymore.
