recipe ideas needed please for my new year resolution

ive decided that we are going to improve our diet as a family....the kids eat a reasonable amount of fruit and veg but dh and myself DO NOT !! so i have decided to cook more and stop relying on the chinese and chippy :blush:

so who wants to give me some quick and easy yummy recipes to help me out then :D

Natalie DH does all the cooking - so can't help with any recipes, but I will be back on my Slimming World diet in the New Year.
 
My self and DH are going to be dieting in the new year too, :guilty: We both would like to loose 2 stone by our holiday in june may be we could all share recipies and really help each other along. I tried this year but my weight went up not down :rolleyes:

my personal favourite quick n healthy meal is chicken n noodles.

grab some thick chinese noodles and cook. stir fry some vegtables and chicken breast and voila. tastes great with or without sauce. and pretty healthy and quick to do.
 

I think the best plan is to keep things simple (so as you don't get to the point that you just can't be bothered) but still avoid 'processed' ready meals at all cost as these are alwasys chock-full of baaaad things!

How about an old favorite with a twist?

Make a Shepherd's pie but instead of mashed potato used Sweet potato or Butternut squash is yummy too :)

Or how about a good old fashioned chilli? Pop everything in a pan and then just leave it to simmer for a couple of hours.

Or....if you have a Slow cooker, throw in some diced beef or piggy, veggies, and some stock and seasoning, perhaps some garlic, then in the morning (actually I always did this the night before and just popped the whole pot in the fridge till morning) before you go to work switch it on, then when you come home it's all there just waiting to be dished up...a real good one for winter too :)

Simple is <i>always</I> good in my book ;)

That's just off the top of my head but I'll see if I can think of some more simple but more interesting things as well.

Grilled Salmon fillet with stir fried Veg. Low fat and quick !

Home made 'oven chips' chop potatos into chip shapes ( I leave the skin on) par boil for 5 mins and pop into a hot oven with a little veggie oil until brown.
Omelettes with grated cheese and chopped tomatoes with a side salad (the kids prefer baked beans)

Chicken casserole ( chicken breasts lighly browned - put in ovenproof dish with lots of veggies (carrots, onion, mushrooms, turnips, etc) some good stock and season.Low heat for a couple of hours. Serve with Jacket potatoes. Put in oven with casserole 1 1/2 hours before end of cooking.

Avoid white bread if possible its full of naughty bits and pieces !

Cod (or white fish) filet with a home made sauce e.g. cheese, parsley, using skimmed milk. with mashed potato and peas.

With DW being a vegetarian we eat alot of Quorn instead of meat which is a lot lower in fat.

One of my favourite meals is a Quorn sausage and bean bake with a mashed potato crust served with steamed vegetables. Very healthy and very tasty :teeth:
