I think the best plan is to keep things simple (so as you don't get to the point that you just can't be bothered) but still avoid 'processed' ready meals at all cost as these are alwasys chock-full of baaaad things!
How about an old favorite with a twist?
Make a Shepherd's pie but instead of mashed potato used Sweet potato or Butternut squash is yummy too
Or how about a good old fashioned chilli? Pop everything in a pan and then just leave it to simmer for a couple of hours.
Or....if you have a Slow cooker, throw in some diced beef or piggy, veggies, and some stock and seasoning, perhaps some garlic, then in the morning (actually I always did this the night before and just popped the whole pot in the fridge till morning) before you go to work switch it on, then when you come home it's all there just waiting to be dished up...a real good one for winter too
Simple is <i>always</I> good in my book
