If we rebook onboard and then change our date of our cruise, will be penalized? Will still receive the discount and onboard credit?

You will still receive the 10% discount - but it will be on the current price of the date you switch to - not based on the level of early booking savings you received on the cruise you originally booked. You will also retain your shipboard credit.

So far when we have booked on board, we've always kept our stateroom credit!

I know if we want to re-book on board, we will have to take a stab in the dark, and be grateful for wherever the dart lands. DH is a school principal, and the only month we can count of being off work if July. So we will decide what week to book for in July 2005, and see what happens. We won't know where we will be sailing to, but I figure if it doesn't work out, we'll just have to change the date. You all do suppose they will let us book July 2005 even if the praticular itinerary hasn't been set, right?

If the schedule hasn't been open for July, 2005 by the time you go on your cruise, DCL will not book you for that date. You could book for the latest date available at the time and then change dates when the schedule is opened for booking.
