Reaching Capacity @ Easter

Do any of the parks typically reach capacity the week before Easter where they won't let any more guests in?

We'll be there 3/19-3/26 (leavning Easter Sunday, 3/26) and I'm trying to plan my days. I wanted to hit a park early, leave after lunch and return to a different park in the evening. Will there be any days that we might have trouble doing this?

The only time you'll get close is on the Saturday prior to Easter. The rest of the days should be quite crowded, but not likely to close. Even if a park does close that week, it's likely to be MK. And even if that happens, it's likely to re-open after 3pm -- a lot of people leave after the parade. You should be fine.
