My little one is allergic to rice, eggs, and carrots. How do I go about getting in contact with the restaurants to make sure my daughter doesn't have any allergic reactions. I hear Disney is excellent at accommodating food allergies, but I'm so nervous.

Should not be a problem Make sure you list on your online reservation food allergies.
When you check in mention again you have someone with food allergies. Then tell your waitress or waiter. When we had someone traveling with us who had food allergies the chef came to our table and discuss with us what the allergies were and on one occasion made something special that was not on the menu. Quick service will be a problem at some places, you will have to monitor.

Not a problem. I'm allergic to soy and whey protein, carrots, parsnips, turnips, tree nuts, raw fruits and berries (not citrus though), and coconuts (I know I probably left something out of that list). Disney is usually great about allergies, and it is amazing how far out of their way they are willing to go to make sure that I have a good dining experience.

I was floored the first time a chef looked at my allergy list and asked if I was allergic to soy protein or lecithin... I'd never had anyone know that there was a difference until that point!

As PP said, make sure you mark the allergies when making ADRs. Remind the hostess and waiter/waitress when you check in. They will get the chef to come and talk to you.

At QS meals just tell the cashier that she has allergies and they will get you the manager/supervisor who will bring you a binder with all of the ingredients.

I am allergic to 7 of the top 8 allergens (I'm fine with fish) as well as cherries, bananas, broccoli, sesame, ginger, thyme. The chefs were all wonderful.

Thanks guys! This makes me feel so much better. I get anxiety when it comes to eating out with my daughter.

Is she pretty flexible about what she eats? QS may be a challenge as a number of the allergy safe foods have rice as a substitute. I know the allergy safe chicken tenders have rice. I'm also allergic to carrots and that's pretty easy at WDW though Be Our Guest has a carrot ketchup which you might not expect. They carry a number of Amy's organic products so it may help to look online and see if any of those work with her allergies. TS is super easy because they have lots of ingredients and a full kitchen. QS in most locations is tough because they often can't change things that are pre-made. Sunshine Seasons in Epcot has lots of options. I tend to do mostly resort QS locations because they carry a lot more ingredients and have full kitchens. I'm fine with eating a burger with no bun and fries too in a pinch which is pretty likely to be safe for your daughter too. Baked goods are usually not safe so I'd bring some favorites to carry with you to have just in case.
