I was going to try the Overnight Blueberry French Toast last weekend when DD had a friend overnight, but the friend turned out to be a picky eater. She told me, "I detest cream cheese!" so I ended up trying the Wilderness Lodge's Stuffed Blueberry French Toast. DH, DD & I really, really loved it . . . but (surprise, surprise) the friend refused to try it based on looks alone.
Anyway, it was such a hit with us that I thought I'd post it for anyone that hasn't tried it yet.
DISNEY'S WILDERNESS LODGE FRENCH TOAST
8 oz loaf French bread
1 c fresh blueberries
2 c milk
3 large eggs
¼ c sugar
¼ tsp vanilla extract
¼ c sugar
¼ tsp cinnamon
2 Tbl butter or margarine
Cut bread diagonally into eight 1½ thick slices. Cut a 2 long slit 1 deep in top of each slice to form a pocket. Divide blueberries into 8 portions; fill pockets with berries.
Whisk together milk, eggs, ¼ cup sugar & vanilla. Combine ¼ cup sugar and cinnamon in cup. Set both aside.
Soak bread slices in egg mixture 30 seconds to 1 minute.
Melt butter in pan & cook over medium heat until golden 4 to 5 minutes, turn once. Do 4 slices at a time. Transfer to platter, cover & keep warm. Wipe skillet. Repeat process with another tablespoon butter and remaining bread.
Serve sprinkled with cinnamon-sugar. You can serve with maple syrup, if desired, but we didnt think it needed it.
[NOTE: I didn't have any French bread, so I just used some hoagie/submarine rolls (not very firm ones) & cut them as instructed. Because they were smaller than a loaf would have been, I divided the berries appropriately. I didn't use butter - just olive oil like usual. Next time I'm going to try using Splenda instead of the sugar. I just haven't figured out how much to use yet.
