I was going to try the Overnight Blueberry French Toast last weekend when DD had a friend overnight, but the friend turned out to be a picky eater. She told me, "I detest cream cheese!" so I ended up trying the Wilderness Lodge's Stuffed Blueberry French Toast. DH, DD & I really, really loved it . . . but (surprise, surprise) the friend refused to try it based on looks alone. :rolleyes:

Anyway, it was such a hit with us that I thought I'd post it for anyone that hasn't tried it yet.

DISNEY'S WILDERNESS LODGE FRENCH TOAST

8 oz loaf French bread
1 c fresh blueberries
2 c milk
3 large eggs
¼ c sugar
¼ tsp vanilla extract
¼ c sugar
¼ tsp cinnamon
2 Tbl butter or margarine

Cut bread diagonally into eight 1½” thick slices. Cut a 2” long slit 1” deep in top of each slice to form a pocket. Divide blueberries into 8 portions; fill pockets with berries.

Whisk together milk, eggs, ¼ cup sugar & vanilla. Combine ¼ cup sugar and cinnamon in cup. Set both aside.

Soak bread slices in egg mixture 30 seconds to 1 minute.

Melt butter in pan & cook over medium heat until golden 4 to 5 minutes, turn once. Do 4 slices at a time. Transfer to platter, cover & keep warm. Wipe skillet. Repeat process with another tablespoon butter and remaining bread.

Serve sprinkled with cinnamon-sugar. You can serve with maple syrup, if desired, but we didn’t think it needed it.

[NOTE: I didn't have any French bread, so I just used some hoagie/submarine rolls (not very firm ones) & cut them as instructed. Because they were smaller than a loaf would have been, I divided the berries appropriately. I didn't use butter - just olive oil like usual. Next time I'm going to try using Splenda instead of the sugar. I just haven't figured out how much to use yet.
 
OMG- THANK YOU for posting this recipe! I had this on my honeymoon 9 years ago and thought it was the best tasting thing of the whole week! Since Artist Point doesn't serve breakfast anymore, I thought I was out of luck to ever have it again. THANKS!
 
I'm glad you can use it! I had copied this recipe quite some time ago, but never made it as I assumed it was "labor intensive". I was pleasantly surprised when it didn't take very long & wasn't hard to make! :D

Sounds delicious. This is very similar to another blueberry french toast recipe I have.
 

That sounds delicious, definitely going to try it this weekend! I searched for the Overnight Blueberrry French Toast recipe, but couldn't find it...could you post that too?

High jacking my own thread here ;)

Speaking of french toast . . . . . did you catch the thread on the community board about how to make french toast? Someone posted a recipe/description of something from a restaurant that called for cream cheese spread on the bread with seedless raspberry preserves & then do the fr. toast as a "sandwich." I thought that sounded appealing & tried it this AM - DD left to go to Williamsburg at 8 & I wanted to do something nice for DH.

I didn't have raspberry preserves & thought strawberry might work . . . . it was WAY too sweet! However, the one I made with orange marmalade instead of the raspberry was really good! :teeth: Evidently you need a tart jam - just in case anyone else was thinking of trying it.

Now back to your regularly scheduled thread . . . .
