We've got MCO down to a fine art (average time 1 hour from wheels touching down, quickest ever 35 minutes!), so hopefully my tips will help (although obviously you need to have some luck on your side, too).
We tend to fly Virgin PE which is a big advantage as it means we're first off the plane (due to the configuration of the Orlando route flights, PE pax are allowed off the plane ahead of UC pax). That then means first through immigration, bags off first, first through customs, and so on. On the occasions when we've flown economy, we've learnt through experience that being near the back of the plane can easily double the amount of time it takes to clear the airport. Being last off the plane has a knock-on and cumulative effect on everything else. So, my first piece of advice is to get seats at the front of the plane. If you manage to snag the ones right next to the exit you will be the very first off the plane because they'll need to clear that space for others to pass through.
Jen's advice about immigration is quite right, but it's worth taking a moment to assess the situation as you come down into the hall. People tend to be attracted to the middle lanes and, bizarrely, to queues. Look to the far ends (both left and right) and you may even see some empty, or near empty lanes.
Once through immigration, you need to collect your bags and, obviously, you need a bit of luck here. The baggage handlers at MCO are extremely efficient, so even if your bags are amongst the last off, you shouldn't have too long to wait.
Next up is customs. When we've flown PE, we've always passed straight through with no line, but when we've flown economy I've noticed that there's usually more than one line. That information isn't necessarily going to help you if there are two (or more) lines of equal length, but I thought I'd mention it.
Once through customs, it's no longer necessary to relinquish your bags - you can take them with you to the main terminal. You have to manoeuvre them up an escalator and onto the tram, so try to travel light - they will force you to give them up if your party has too much luggage.
Whilst waiting for the monorail, move as far forward as possible. You'll then be in the first carriage and ahead of everyone else alighting the train as you enter the main terminal. Who are you flying with? Is your car hire booked independently? There are two sides to the terminal - A and B - and they are mirror images of one another. If you've booked car hire independently, it doesn't matter whether you use the car rental firm's desk on side A or side B. Due to the location of the monorail stop, it's quicker to head for side B. Sign up for your rental firm's express facility (they're all called different things, but they effectively allow you to jump the queue and they're free). If you've booked a package you may have to use a dedicated desk (I'd suggest checking with your tour operator if you're not sure).
As far as food is concerned, there's nothing to stop you using the airport's facilities in the main terminal, although I'd probably be inclined to sort out the hire car paperwork first. Simply head back up to level 2 and then collect the car from the garage when you've finished eating.
