Quick November trip, opinions on my park plan?

We are going to Disney for a quick trip in November, 11th-15th. I have a rough draft of a plan we hope to follow, keeping in mind that Soap Opera Weekend is going on at MGM, and the Food &Wine festival is at Epcot. So we will be trying to avoid these parks at those times. We are also bringing our daughter, three years old, for the first time. I know plans can and will be broken, but I like to have some type of schedule. Let me know what you all think, please.
-Arrive late Thursday, staying offsite, renting a car, go to Downtown Disney
-Friday morning Magic Kingdom, afternoon MGM (finish MGM)
because of Soap Opera weekend, we have been here many times, so MGM will only take us a few hours.
-Saturday morning Animal Kingdom(finish)
Epcot in the afternoon
Magic Kingdom for Wishes at night
-Sunday Finish up Epcot, finish up Magic Kingdom,
Fantasmic Dinner Show
-Monday home
Just waiting for park hours and we should be all set. We plan to see the Magic Kingdom parade and the show in front of the Castle also. The other parades we have seen many times, as well as Illuminations and Spectromagic. Looking forward to a great trip and cannot wait to see the look on my daughters face. Thats another reason why I want a plan, to make the trip special for all of us. Thanks for any help or tips or comments.
 
Sounds good. You do have some really long days there-- but you've already mentioned you're flexible so it should be just fine. I do know that when we have gone w/ infants and toddlers. We found it's just easier to not park hop. They require so much "equipment" that it's alittle cumbersome. Not to mention it really seemed to completely "disrupt" them. So we personally, found it was easier to pick a park for the day and stay put.
