Quick, Easy, Low Cal and Low Carb Lunch Ideas

I'm going food shopping tonight, and I really need help. I work almost full time, and don't really have time to make meals for lunch/dinner, so I'm looking for some ideas from you guys as to what I can do/make. As of right now, I'm eating soup every single day for lunch, and for dinner, I usually have a frozen Healthy Choice or something. I need to mix it up, and get something home-made in there, but not something overly expencive, or difficult / long to make.

Any ideas are greatly appreciated!!!!!!!!!!!! :flower3:
 
Pre-cooked chicken for salads or chicken salad (my stand by low carb fare).
Low carb wraps (with alot of fiber) for a sandwich.
Eggs (for egg salad....another easy lunch for low carb)
Dreamfield pasta (best pasta ever!)
Low sugar yogurt
Strawberries
Pre-made salad in a bag
Peanuts (for a snack)
Natural almonds (come in 100 cal packs now)
 
Some of my favs are:
Morningstar Farm burgers (meatless)
Purdue perfect portions (great and easy if you have a grill or Forman)
100 cal mini bags of popcorn
frozen veggies
canned beans
couscous
egg whites
Del Monte canned diced potatoes (great for easy hash browns with breakfast)
Light English Muffins
Carnation Sugar free breakfast shake mix (for smoothies)
Ronzoni Smart Pasta
Sugar free Jell-o pudding and gelatin
Apple sauce
Lower Sugar oatmeal (Quaker Oats)
 
Lean Cuisines
Fruit and yogurt for smoothies (can be taken to work as a snack)
Turkey Burgers (take 10 minutes to make on the Foreman grille)
Sugar free jello (60 calories per serving)
 

My DH does most of the dinner cooking and he's had to do so without oil due to the plan I'm on currently. When he cooks, he does extra and then we pack them up into 4 oz serving in snack-size plastic bags. This way I always have access to grilled chicken tenders, flank steak, or parchement-cooked fish to go with salads.

For the school year, I plan to put pre-washed salad greens into a plastic container, take along a bottle of red wine or other vinegar to put in my cupboard for salad dressing, and then grab a pre-measured package of protein. I like my fruit already cut up; apple slices only need to be tossed with a little lemon juice to stay fresh, and strawberries will stay fresh in a zip-lock bag inside my cooler-type lunch bag. I also plan to take along a stick of low-carb string cheese for those late afternoon hungries.

If you take the time right after dinner to make up your portions, and then put them into a place in your fridge, taking a healthy low-carb lunch with you should be inexpensive and easy--at least that is the theory. BTW, I lived on the Spa Lean Cuisines all last school year and actually put on 25 lbs! We ate "low glycemic" for our dinners and I was not, am not a big snacker. My plan is to stay away from the processed foods at all costs this year.
