questions on camera settings

My husband has a Nikon D750 with a 35 mm lens. I want him to take pictures during the Peter Pan ride and of the ships during the Pirates of the Caribbean so that I can hang them in our grandsons room. We have been trying to find suggestions for camera settings in these low light situations. Any suggestions from photographers who may have taken photos during these ride?
 
I just returned from Disney, shooting those rides with D750 and 45/1.8.

what I found worked best:
AF-C, center group points. center isn't best for composition, but those points are the most sensitive for autofocus.
Metering -- spot/ highlight protection.
Either manual mode with aperture at 1.8 and shutter at 1/125 or Aperture priority with a minimum shutter speed of 1/125. that's really the slowest feasible shutter speed given the ride movement.
auto ISO -- with the range all the way to HI2 (52,000).
