Sorry if this has been asked before. If I book my trip through Disney, pay for the dining plan and they offer free dining during the time we'll be there, will they adjust the price or am I s**t out of luck?

You can rebook the trip and be refunded your origional purchase cost. Then pay for the new booking.

Disney never automatically applies a new discount, be it free dining, a room discount or a package discount/upgrade. However if you find out about the new discount and call them, they will either change your reservation to apply it or cancel and rebook. However there has to be availability of the discount for room and time period you want.
