Question for Bakers - Safflower Oil?

Hi :wave:

I'll be making a carrot cake and the recipe I have calls for safflower oil. I made this recipe once in the past and I did use safflower oil. The cake was delicious. Now we have a Disney trip coming up and I am trying to NOT spend money on ingredients I won't use again, so my question for baking experts is...Is safflower oil necessary? Does it have a "taste" to it, or would I be okay substituting regular canola oil or vegetable oil (i.e. something I have).

I bake all the time and have never used safflower oil. I'm sure canola would be a fine substitute as it really will have no taste in the recipe.
 
If you do buy the safflower oil, you can use it to cook chicken breasts in too. They are wonderful cooked in that.
