If a party using deluxe dining contains 3 adults and 3 children and a grandparent joins them for a dinner can the grandparent use one of the deluxe dining credits or will they have to pay out of pocket?

No. You can only use your credits for people that are on your reservation. It is against Disney policy to use credits for people that are not on your room reservation.

They will have to pay out of pocket.

On all dining plans, credits may only be used to cover those on the resort reservation. They also won't (well, shouldn't) allow for more credits spent than the makeup of the party. So, in your case, you'd be limited to using a maximum of 3 adult credits and 3 child credits per meal, or twice that (credit-wise) for 2TS locations. Note that you can use fewer credits than indicated, but they shouldn't ever be allowed to take more (it does happen, but nothing that you can count on or even ask for really.)

We have a similar situation: 2 adults and 2 kids on Deluxe Dining Plan with grandma (not on any DDP) joining us. We don't want to use credits, but we have a few days where we are having TS lunch and a 2-TS dinner and may want to share all the food on the table (which is our normal eating style anyway). Will they disallow grandma from sharing? Or are they a little more flexible? I can't imagine ordering 2 kids meals, 2 adults apps, 2 adult entrees, 2 desserts and, on top of that, ordering something OOP for grandma.

If she orders her own entree, I doubt they would care. Most people tend to do some sharing. She wouldn't be able to just nibble off of all your stuff.

If she orders her own food and eats tastes off other plates, that would appear to fit with Disney's rules, but if the intent is for her to make her entire meal by sharing, it would likely not.
