Question About Modifying Number in Party

My mother hasn't decided whether she's joining us in July. My dining reservation window opens tomorrow. Should I book with my mother included (party of 8), then remove her if she decides not to go? Or, should I book a party of 7, then add her?

My main concern is HDDR. We always get Category 1 seating for the 8:30 show. I don't want to get stuck paying for a non-attendee, but I also don't want to lose a good table if my mom decides to come.

Book for 8, absolutely. You can always drop someone. Adding can be problematic. If it is a prepaid meal, I recommend changing the number either on the phone or at guest services when you are at the park.
