Is it all adults or a mix? Do you want to eat in a park or a resort? Is your mom looking for quiet? funny? What foods does she prefer to eat? All this has an impact. Very hard to make recommendations without knowing those answers. That being said- my last birthday at WDW, I ate at 50's Prime Time. I had a blast. My "cousin" called me "Sunshine" the whole night, generally made a big deal of my birthday. Your mom might appreciate the retro 50's decor, atmosphere, tv clips, etc. My family loves it! They would definitely make her bday special, fun and leave you with a lot of laughs. However, if she is less outgoing and more reserved, or would prefer a more elegant dining experience, this would be a bad choice.
One of my very favorite restaurants is 'Ohana in the Poly. (I LOVE the Poly!)The food is amazing and it just keeps coming. No characters, but there is traditional ukelele music and a coconut rolling contest for kids. Somehow they entertain the kids, while not causing too much of a spectacle that would detract from people trying to have their own conversations.
For a more elegant experience, try Narcoossee's or (if you only have a few people and a LOT of $$ to spend) Victoria and Albert's in the Grand Floridian. The elegant Victorian atmosphere is memorable and very sophisticated.
Discriminating tastes are always impressed.
An idea that I would suggest would be to book a fireworks cruise. You can get it catered from one of the resorts on the lake and it would be lovely to watch the fireworks from such a vantage point.
Would your mom like eating in Cinderella Castle? CInderella's Royal Table might be a special place for her.
In short, there are tons of great Disney places that would all create a memorable birthday experience for your mom- but they're all very different - different cuisines, different moods and different prices. Decide on your expectations first, and the place will be more likely to live up to them. Good luck and write back and let us know some more!
