Question about bar packages

Okay so we got our info about bar packages and we were wondering how customizable are they? I mean I figure if we're willing to pay for consumption then couldn't we have some of this, some of that, and none of that or is it this is what you get or nothing at all? Have any of you done this? The reason why I'm asking is we want soda, wine, and maybe a signature drink. Absolutely NO beer. We just have some, um, overimbibers in the family who won't touch wine with a ten foot pole but drink beer like fish breath water. So before Uncly Myron starts groping the Matron of Honor (and then gets punched out by her husband) we're trying to figure out how to make the whole thing as preventable as possible. Any thoughts or insights on this?

Not for sure on the answer to this one...would like to though.

I am pretty sure they can do this. You may have to have a billed on consumption bar but who cares if you get what you want. I know we are having all the regular stuff but adding a few signature cocktails and we will get charged per drink. HTH

Well we did the math and for what we want to do consumption would come out way cheaper -- even with the folks who seem to think open bar means "Oooh! I can get stone drunk on someone else's dollar!" I would think they could do that too but that's why I check. Also, has anyone had a signature drink that was offered only at the cocktail hour?
