Question about applying new discounts

If I book with todays deals and then later find a better deal (like if discounts expand to start January 3rd or free dining or something) will I be able to get money back and change even if I have already paid in full?

As long as you qualify with the new discount and can get it added, yes. They would just refund any overpayment.
