Quesadillas

Lay one tortilla on a plate, sprinkle with large amounts of your favorite cheese or mixture of them, toss some chicken/been or shrimp place another tortilla on top sprinkle with additional cheese, microwave or toast until cheese is melted. Cut up using pizza cutter, enjoy. That’s the way my 13 year old makes it and they the best.
 
We're having chicken quesadillas for dinner tomorrow night - yum!

I marinate my chicken in Lawry's Tequila Lime marinade. Then, I cook the chicken on my Foreman grill and then shred it in the food processor.

I also cook up & crumble some bacon.

To make the quesadillas, I take a soft taco size tortilla and butter one side of it. Place it buttered side down in a large frying pan. Sprinkle Kraft Mexican Blend shredded cheese, bacon, & chicken on the tortilla and then top it w/ another tortilla (buttered side up) and let it cook a bit to melt everything and then flip it over to brown the other tortilla. DH adds onion, green pepper, & cilantro to his quesadillas.
 
I always add sauteed onions, peppers and chicken. Add cheese, put on the grill and top with salsa and sour cream. Sometimes I will add mushrooms or black olives.
 

Mine is easy. I just use bite size pieces of chicken and let it marinade for about 1 hour in Guadelupe Mountain Mexican Fajita marinade (in the sauce section--comes in a square bottle). Fry it up. Then I lay a tortilla in the pan, sprinkle a little Mexican cheese blend, add chicken, more cheese and top with a tortilla. Flip when brown after a few minutes. Add salsa and sourcream. My kids love them and takes only a few minutes after I marinade them. Quick, easy, yummy, and cheap (well the cheese is a bit pricey but still not bad).
 
I buy one of those fresh roasted whole chickens at the grocery store. Tear all the meat off it and it saves tons of time making quesadillas.

For a quick snack quesadilla, I just put a tortilla in the microwave, top it with shredded cheese and a little garlic salt, zap it for a minute til the cheese melts, fold it in half and eat!
 
We like a varierty of fillings in our Quesadillas. The kids like plain cheese ones - we use a shredded Mexican cheese blend. We like chicken, green peppers and onions in addition to the cheese, too. Instead of butter, I use PAM to spray the pan, and to lightly spray the tortilla. They brown up nicely that way.

Last week I made turkey sausage fajitas. I chopped and browned the sausage, cooked up some peppers and onions, and warmed up the tortillas. Then I put salsa on the tortilla (Newman's Own Pineapple) and added the toppings. They were fantastic!

Annette......you should also try making the quesadillas on the George Foreman grill too!! It's perfect for it.

My recipe is pretty simple.....

I marinate some chicken breasts overnight with some home-made seasoning and a little bit of white wine. Grill them the next day.

I use the burrito sized tortillas. Add some of the chopped up chicken, Monterray Jack cheese, and jalepenos. Fold in half and then cook on the George Forman grill for about 3 minutes.

Yum!
 
We have one of those quessadilla makers. I love egg and cheese ones. Lay one tortilla on the maker thing. Crack an egg and scramble it like you would if you were making scrambled eggs. Pour it onto the tortilla. Sprinkle shredded cheese on top. Put a second tortilla on. Close the cover and let it cook. Just make sure you cook it long enough so that the egg cooks.
 
We are asked to make these for every party that we attend.
We brown ground chicken or turkey then add a jar of "hot" salsa, green peppers, onions, jalepenos and fajhita seasoning mix. (if you like them really "hot" add habenero peppers) Let it boil down. Melt butter in a pan and brown tortillas. Put some the the chicken/turkey mix on one tortilla, add some cheese and top it off with another tortilla. Wrap in aluminum foil and bake on 350 until cheese has melted.
( if you are a fan of really "hot" food we like to use Mrs. Renfro's habenero salsa.)
