I was going to say almost the same thing - my grandmother used to use half ricotta and half cottage cheese. Try it and see if you like that better. (And I personally don't use egg at all. - I think that's just to make the cheese easier to spread anyway, so as long as you have a little patience, you'll be fine without it.) My other "secret" is to use the real noodles that you have to boil. MIL tried the no boil ones, and she didn't like how it came out, so I've stuck with boiling them.
I agree with both of these. The no boil ones never worked for me. I don't mix cheeses, just cottage cheese, no egg added. Plenty of mozzarella though, lol

I make my lasagna with ricotta. I mix in shredded mozzerella and some parmesan cheese with the ricotta. I do not use egg. I use the boil noodles as they just seem better. I do 3 layers. When I made it for Chris I would add in cooked hot Italian sausage that I took out of the casing before cooking, into one side on each layer. It reminded him of his grandmother. I put some sauce on the bottom of the pan then a layer of noodles, ricotta mix, sauce, then the same again for the second layer, then top it with noodles. I add sauce on top and then sprinkle remaining cheese on top. I like it but everyone has their own tastes.

Pea Like the Cottage cheese recipe. Will try that.

That's what I did too, added ground beef and Italian sausage out of the casing.

I'm on a roll today. The elec co is across the street replacing the pole that lady cracked when she hit it a couple of weeks ago. Thankfully only that side of the street lost power. Who schedules a pole replacement the day before a holiday when people are cleaning and cooking anyhow.

The sun is out, Dave is coming at 3.

I have my tree together, and plugged in and all of the lights work.

One of my cats is already trying to figure out how to climb it (he's the only one who even bothers with the tree). I'll tether it to the wall as soon as it's decorated, most likely tomorrow.

My bad luck this week continues. The sun was shining. . Dave pulls in at 2:45 and it starts pouring again, despite no rain showing on doppler. He can't pour concrete in this. The winds have picked up and will be 30-40 mph. He said maybe Saturday, even though it's only going to be 40. He said he can do it in that temp, that we have to get it done before the 2-3" of snow they're predicting on Tuesday. I give up.

Happy Thanksgiving to all. Have a great day.

Lynn Hope you have a better day.

Good morning. It is 37 now with temps heading to around 45. Yesterday was such a warm day for November. Now the cold air is coming back. I made the cheesecake bars yesterday and left them in the fridge overnight. I had a 6 am snack of one bar to see how it came out. The bar was delicious. I was surprised how good I think it is so all is good for one dessert for tomorrow. Next up this morning is the chocolate cream pie. Then the desserts for the kids, brownies and blondies. Jeff and kids did a videochat with me last night. Sam says Hi and then asks if he can press the button to end the call. He is all about pressing buttons. He looks so much like Jeff it brings me right back to when Jeff was 3. Today I am going to visit with Kenny for a bit while he gets his house ready for 20+ people tomorrow.

I hope everyone has a nice day. I am thankful for the kind, caring people on this thread. :grouphug:

Good morning. 36 now going to 37, and the winds are still very strong. They howled and rattled windows all night long, making it hard to sleep.

Summer and her husband finally made it home at 8 pm last night. She said the new car was fine. I hope it stays that way.

I'm thankful for all of my DIS families, especially our Quacker one.

I wish you all a day of peace and good food.

My tree is up and decorated and lit. Another thing I've never done before Dec 1st. I changed out the outdoor Thanksgiving stuff to Christmas, set the timer so the lights will go on tonight. And I'm done decorating the rest of the house, as much as I wanted to. Not the usual, but it will do me well.

Turkey thighs are ready to go in the oven, they'll take less than an hour. Everything else was made yesterday so all I have to do is reheat it.

I haven't stopped since 9 am, but now I'm done and I can sit and relax and enjoy the fruits of my labor.

@citruscurtis Very beautiful picture.

Good morning. It is 30 now with temps staying in the 30s today. Tuesday we are supposed to get 5-8 inches of snow. Last time I looked it said one inch. Dinner at Kenny's today. I dropped off some desserts yesterday so I wouldn't have as much to carry today. I put up my decorations on the mantel yesterday. I bought a round cardinal ornament to use as a kind of tree topper. I tied it to the top branch sticking up and the branch fell over. It reminded me of Charlie Brown's tree when they put the ornament on it. I have my own Charlie Brown Christmas tree which makes me feel good. I did move the ornament a bit so the branch now stays up. I will decorate the rest sometime this weekend or next week. Then I am done.

Have a good day.

Here it’s 36°and heading up to42°.

I try to decorate one or two Gingerbread houses with recruits. This year, it was one.

This year they signed it with “appropriate for them” phrases they hear in basic training. I always use the houses they decorate as centerpieces for the “Christmas” recruits. I hope they get a kick out of the surprise these left for them.

I (who generally do NOT go in for crazy Black Friday stuff 😆) am currently in line for the Squishmallow thing at 5 Below - for the toy drive at DH & DS's Lodge.

Wish me luck!

Our dinner was at my Son's house with 11 of us gathering. It included 2 active duty National Guard service members who are friends and serving in the area. There was a bit of discussion about the recent tragedy in town. It hit that community hard.

My son brined a turkey and shopped for most sides and my DiL made some delicious appetizers. My older DD brought veggie sides and a pumpkin pie. I brought lemon pie and pecan pie. I forgot to put butter in the pecan so it tasted overly sweet to me, but the lemon turned out perfect. The pecan got eaten first, and I also tried a small piece to check it out. Younger DD made the cranberry sauce and it was excellent.

On holidays I tend to receive a lot of texts from friends and former coworkers/employees so I had to turn my phone off for a few hours. I think the phone beeping contributed to my butter lapse.

Grandkids enjoyed themselves playing and being together.

Still, happy to get back home as I hate the journey. Traffic was normally thick and it was a ride back in the dark. I don't like driving in the dark.

Now it's time to get myself ready for Tuesday's trip to Disney. It's too soon but I'll get through it. No Xmas tree until I return unless DD gets motivated to do it without me which I doubt.

My tomato plants appear to be ready for a winter sleep. They had been giving me a few new ones up to this past week. I'd brought them up on the deck and they were sheltered so just kept on growing. No big freezes here yet. I also had a couple of pots of annual flowers that were doing well. Not so much anymore. I'll re seed them in February-March and start again.

Happy Day After Thanksgiving.

Waiting for my daughter to let me know when we are heading out. It has become an annual tradition since she had the kids. I do need to find one or two things and I have coupons which always makes me happy

Dinner was at my moms and even with 3 leaves in the table there wasn't enough room. Besides my mom and dad there were my 2 brothers, SIL, 2 nephews, 2 friends from church and me. My husband stays home to watch football. He's happy that way and I just bring him some food home. Dad ate a lot which was nice to see as we thought he would be in the hospital again Tuesday night. He keeps waking up with really low blood sugars and a lower than normal temperature. My daughter went down with my grandson to help get him in the car but she checked his vitals and they were normal so she advised mom keep a check on him. I told mom she needs to give him juice when he wakes up to get his sugars up a bit but she will be calling his doctor on Monday as they are closed for the holiday weekend.

I actually started decorating for Christmas already, which I never do until the 1st Sunday of Advent, but since it is this Sunday anyway I took advantage of the nicer weather outside. Plan on doing inside tomorrow while Jim watches more football. I am having my Thanksgiving dinner on Sunday and my grandson and his family will come for dinner so I get to see the not so Little Man. LJ will be 5 in January but he is already in a size 6/7. He is a big boy. I want to get him something Disney for Christmas in preparation for our trip in September.

Not much else going on around here.

Gamified shopping was successful! There were only a few other people and everyone was very courteous. I was in and out in 15 minutes, and managed to squish 8 of them into the bag (which the cashier said was the record so far🥇) resulting in a price of just over $3.12 each!

I also picked up a couple of beaded bracelet kits and playground balls for decent prices while I was there as well.
