Thought to add that, I love to keep those soups on hand. If something happens and I send food to someone in a pinch, say, those are quick and good and everyone always loves them. (I just got one of my soup pots back recently from a friend who’d had a sudden loss and I sent over a fresh, hot soup same day. They’d had so many things sent they didn’t know which pots or pans were whose until I asked for it back!) Also easy to send via
Amazon as small gifts for birthdays and such, and they’re always well received. I’d just sent my sister the chowder one (she doesn’t cook much but her fiancé does and I know she loves corn chowder so it had gotten me thinking about it and I had one on hand so made it myself, too).
BUT, my mother
always made corn chowder, and I make it her way more often than I use the Frontier corn chowder, so I thought I’d include that here, too. Super easy and I usually have all ingredients on hand.
Mom’s Corn Chowder
Chop up a few potatoes (ok to leave skin on if you like) and an onion and add slightly salted water (just to cover or less, no more or it will be too watery). Boil those until tender. When done, add two cans of drained corn niblets and one can of cream style corn, salt and pepper to taste, and a little milk or half and half. (It’s done then, but can cook on low for a little bit to thicken if you want; this is more like a soup than a thick chowder, though, this way.) I like to also add some butter, and serve with a dot of butter and some bacon bits.
Mom used water in home cooking more than chicken broth. I suppose you could use that for more flavor, but I don’t like the extra sodium (even with low sodium broth). I miss her stews and soups and meals, always simple but hearty and good.
I think I might bring my elderly friend some chowder today, and an ice cream, and visit for a bit. I also made a new elderly friend, though she doesn’t seem that way at all. (Was shocked when she told me her age!) She keeps reminding me we’re supposed to go to lunch sometime, so I have to remember to arrange that before summer’s over. She’s a retired nurse and we got talking one time in a store I frequent, so I see her pretty often. I was thinking I might also ask her if she wants to come with me to visit my other friend sometime, they’re the same age, and she might also have some ideas to help the other friend, who has been having mobility issues.
