Pumpkin Cookies??

Hey guys,

Does anyone have some good recipes? Looking for two -

- a good and EASY recipe - easy as in as few ingredients as possible? :)

and

- a recipe that actually uses the filling from pumpkins?

Not a recipie, but Little Debbie's Pumpkin Delights are delicious!

I have a great recipe!! Let me go get it and I will edit!

EDIT:
2 cups shortening
2 cups sugar
1 16oz can pumpkin
2 eggs
2 teaspoons vanilla
4 cups of all purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/2 teaspoon ground allspice
2 cups rasins (I DON'T PUT THESE IN. Bleck!)
1 cup chopped nuts (I DON'T PUT THESE IN EITHER)

Cream shortening and sugar. Add pumpkin, eggs, and vanilla; beat well. Stir together flour, next 5 ingredients, and 1 teaspoon salt. Add to batter; mix well. Stir in rasins and nuts (OPTIONAL!). Drop rounded teaspoonfuls 2 inches apart on greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes. Cool on rack. Makes 7 dozen.

There you go!!

I'm not sure if this is exact, but you mix 1 box of spice cake mix with a can of pumpkin? I know it's only those ingredients, and I think it's one can of pumpkin.

Yes, please post it and I just want to say you have absolutely the cutest dog (next to mine of course!!) ever! Mine is a shi-poo in various shades of brown/apricot. Love him to pieces.:love:

I use this recipe- the cookies come out very cake-like. :cloud9: I usually cut the recipe for the glaze in half because it makes way too much!

Iced Pumpkin Cookies

INGREDIENTS
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar (I do half white and half brown sugar for a richer flavor)
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract

For glaze:
2 cups confectioners' sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.

Pumpkin Spice Cookie

A simple cookie, only 2 ingredients! (No need to add the oil & eggs.) Although I think I'd add some dried cranberries & walnuts or white chocolate chips. Maybe top with a cream cheese frosting. :)

1 (18.25 ounce) package spice cake mix
1 (15 ounce) can solid pack pumpkin puree (not pumpkin pie mix)

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.


These would go great with a warm apple cider. :love:

For a variations:

If you prefer the taste and texture of gingerbread to fluffy cake-like cookies, use a box of gingerbread mix, plus half of a 15-oz can of pumpkin. It comes out as soft, dense, moist, spicy cookies. Make sure you grease the cookie sheet, though, because the lack of added oil makes them stick.

Another variation: Use a Chocolate cake mix instead of the spice cake mix. Doesn't taste as pumpkin-y.


For Pumpkin Spice muffins: add 1/3 cup water to the 2 ingredients above. Add in 1/4-1/2 tsp pumpkin pie spice for extra pumpkin-y flavor. For Pumpkin Chocolate muffins use a chocolate cake mix (and leave out the pumpkin pie spice.)


(This reminded me, I'm also adding a Pumpkin Bars recipe to the thread, as soon as I dig it up. :) )
 
I use whole wheat flour in my cookies. My pumpkin cookie recipe is very similar to the two posted above.

Sorry it took me awhile.

Pumpkin Cupcakes!

2/3 Cup Shortening
2 Eggs
3/4 Cup Maple Syrup
1/2 Cup Milk
1 1/2 Cup Flour
1 1/4 Tsp. Baking Powder
1/2 Tsp. Salt
1/2 Tsp. Baking Soda
1/2 Tsp. Ground Ginger
1/2 Tsp. Ground allspice
1 cup Canned Pumpkin
1 can (8 ounces) crushed pineapple, drained
1 package cream cheese, softened (8 ounces)
1/4 cup butter, softened
1 1/2 cup confectioners sugar

In large mixing bowl beat shortening until light and fluffy. Add eggs, one at a time, beating well after each addition (mixture will appear curdled). Beat in syrup and milk. Combine the flour, baking soda, baking powder, salt, ginger and allspice and add to shortening mixture and beat until moistened. Stir in pumpkin and pineapple.

Fill paper lined muffin cups two-thirds full. Bake 350 for 20-25 minutes. Cool for 10 minutes.

Frosting: Beat cream cheese and butter until fluffy. Add confectioners sugar, beat until smooth. Frost cupcakes.

1 (16 ounce) package pound cake mix, (regular yellow cake mix will work fine also.)
3 eggs
2 tablespoons butter, melted
4 teaspoons pumpkin pie spice
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk, (NOT evaporated milk)
1 (15 ounce) can pumpkin puree
1/2 teaspoon salt
1 cup chopped pecans (optional)


DIRECTIONS
Preheat oven to 350 degrees C (175 degrees C). Coat a 15x10 inch jelly roll pan with non-stick spray.

In a large mixing bowl, on low speed, combine cake mix, 1 egg, margarine, and 2 teaspoons pumpkin pie spice until crumbly. Press onto bottom of prepared pan.

In another large mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk, then remaining two eggs, pumpkin, remaining 2 teaspoons pumpkin pie spice, and salt; mix well. Pour over crust; sprinkle with pecans.

Bake 30 to 35 minutes, or until set.

Cool, then chill in refrigerator. Cut into squares. Store covered in refrigerator.
