PS at Epcot World Showcase

Is it absolutely required to obtain a PS for any restaurant at the Epcot World Showcase?

I would like to do the Teppanyaki restaurant but don't really want to set a specific time at this point and I'm at or near the 90 day mark.

No, it is not absolutely required. You can certainly try to walk up at the time you want to eat. However, there may be a long wait if you want to eat at during the more popular times (say, between 5:30 and 7:30). It never hurts to have a PS and then cancel it if your plans change.
 
Teppanyaki is popular, so it's good to have a ps if you're eating at a standard meal time. That being said, we always eat there and I've never made ANY ps at 90 days out. If I get around to it, I make them a month or so before the trip. A couple times, we've made them on the cell phone as we're driving to WDW. The only ones we've ever had trouble getting as long as we were flexible are in-park character meals -- tried to get a Sunday brunch at Crystal Palace one year with no luck.
 
I'd make a PS, and then change it later if need be. Or you can stop by Teppanyaki earlier in the day and ask what they have available, but they could always tell you nothing. If your heart is set on eating there, you should make a PS.
 

For Mitsukoshi Tempanyaki I would DEFINITLY reserve a PS time. That restaurant, along with Le Cellier tend to be very busy for dinner all year long. For lunch it isn't as necessary.
