If you are offsite you can make reservations 90 days in advance. DEFINITELY do this for the popular and character meals. For Disney resort guests the policy was recently changed to (I think) 99 or 100 days out. For more information go over to allearsnet.com and click on dining and menus.

For certain things, like Hoop de Doo Revue and Luau, you can make them earlier- I believe up to 2 yrs in advance.

For onsite guests you still make them 90 days out, you call on the 90th day just as you would any other time, only now you can make reservations for up to 10 days more into your trip. So 90+10. Instead of having to call every day on the 90th day for the meal you want, you can call on the 90th day to your arrival and make dining for your length of stay (or up to 10 days).
