President's Day Weekend: 360 Help!

I am reasonably sure myself, hubs, and toddler are going to surprise my niece with an inaugural DL trip for her 14th birthday on Feb 13. Her and my brother live in Orlando so it will be a "good morning, happy birthday, see ya real soon!" kind of affair. I need advice, information, guidance, bullying (jk) on making this come together.

Deals: Since it is a holiday weekend, I am not counting on it, but curious if DL runs any promos this time of year. I have read about "magical deals" on the WDW side and wondered if they (***) do any for DL.

Time: Saturday arrival will be early afternoon. Massages at Mandara are on the agenda, but otherwise this is a park/resort trip. Is 3 nights enough for a WDW pro to take it all in?

Crowds: I am sure locals and near-locals flood the place. Is Touring Plans of any use or do you have a strategy to recommend?

Hotel: I stayed in DLH once. Loved it. I would be interested in GC but not so much PP. I am skittish about off-site but if there is somewhere that is 4* within walking distance, I'm open to the idea. We likely need 2 rooms.

Dining: Would love a top-5! The one trip we took was largely CS, a local Latin-fusion place, HoB, and Napa Rose (lovely, but not quite my nieces style).
