I try to just roll the clock around and make my breakfast resemble my dinner for a morning race then have a light carby meal about 3 hours pre-race
I think I would aim more for a nice brunch rather than a lunch. I would keep the brunch balanced and make it the larger meal of the day. I would not overload on carbs or Kcal.
I would then look to a lighter mid-afternoon lunch/dinner. Again light and balanced. Looking at my log, I had small lunch salad with chicken.
Finally, about 7-9 I would eat something resembling a pre-race breakfast. I generally eat something like a bagel or oatmeal, OJ and banana. I will also eat a Cliff bar or a gel in the last 15-20 minutes pre-race.
