Pre-holiday pantry challenge

Well, I haven't been the best at this. I have still spent quiet a bit a money in November and went to the grocery Monday and spent around $125. But just today, we booked a suprise trip to WDW for after Christmas. Leave on the 26th and get back on Jan 2nd. So....we are really not buying any food except for milk, bread, fruit, some fresh produce (not much though) and Christmas Eve Dinner, still haven't decided what we are having though.:confused3

We have been eating out of the pantry somewhat. Last night was my version of swedish meatballs. I used a pound bag of meatballs (I had them since last December), onion, jar of beef gravy and a little woreshire sauce and allspice. Cook in crockpot all day, add a dollop of sour cream, heat and serve or egg noodle. Added a bag of frozen corn on the side.

Tonight was chicken breasts, diced tomatoes, and rice in the skillet flavored with an onion, garlic and italian seasoning. It's a one pot dish and everyone loves it here. You can do it with pork chops too. Tomorrow I am popping a 3lb. roast in the crockpot with carrots, celery, onions with mushroom gravy, served over mashed potatoes.

I'm sticking with this until December 26th!

Dh cooked tonight, since I started my new job today! Yay for the budget!! :cool1:

He used the very last of hamburger meat, and used one of the MANY Hamburger Helper cheesy enchilada's we have (.50 sale!). He added corn and served them in tortilla's with lettuce.

No more beef in this house ever. We have a couple servings of ham in the freezer, once those are gone....no more pork!

Congratulations on your new job!

nothing fancy here,
grilled cheese and Campbell's chicken select noodle soup for everyone.
Except me, I just had some macaroni salad.

Tomorrow, I think I'll do hamburgers, fruit skewers and lettuce salad.

Well i just got the big y flyer and I can't pass up buy 1 get 2 free on meat I'm out so I ahve to stock up this week but I will stay in my 100$ budget for the week next week should be a ton cheaper.

Today breakfast was a bagel and cream cheese

Lunch will be whatever leftover I scrounge up.

Dinner is Madarin Orange Chicken Stirfry with rice.

Dinner tonight will be...

Broccoli cheese baked potatoes (I got the broccoli w/cheese sauce boxes for .50, we have about 6 in the frrezer! I also snagged a 20lb bag of potatoes for 2.50...you will be seeing potatoes a lot in the next week or so!)

Fried zuchini- "fake" baked though, leftovers from Thanksgiving meal.

Carrot sticks and apple slices will round out the meal.

I am doing chicken breast on a roll, with Cesar salad and mix veggies (I found 3 cans )

Oh and i counted I have 17 jars of Ragu:rolleyes1.... I do plan to make some ziti and other pasta dishes

Also I am not shopping from Nov 27- Dec 26.. only for basic items....(unless I see a really really really good deal with my coupons):littleangel:

Tonight is tomato soup with grilled cheese. I used up veggies I had in the fridge, and I had stocked up on about a year's worth of crushed tomatoes and various types of beans, so one of each of those. I had several loaves of ww bread in the freezer from BOG2 sales. We always have about 10lbs of cheese in the fridge. My oldest will eat any soup as long as I puree it ;) I made two portions and put one in the freezer.

Last night we had pesto pizzas. I had two frozen whole wheat doughs in the freezer and an opened jar of pesto in the fridge.

Tomorrow cheesy chicken, brown rice, and broccoli. I have tons of each ingredient.

Today
Breakfast- kids had oj and cereal
lunch-ds gets free. dd took a turkey sandwich, juice, yogurt, and banana. I had a ham sandwich with some chips, dh has pb&j sandwich.
Dinner- the kids had mac n cheese, sandwich's (ds ham, dd turkey), and oranges. I had some nachos (tortilla chips, can of fiesta nacho cheese) and dh is at school so who knows what he is having after. All this from the fridge, freezer, and or pantry.

Just wanted to say that I LOVE the eat at home website and daily e-mail. It really inspired me along with this thread! Thanks to all!:)

OMG we had the best stir fry tonight. It was with a sauce in a packet (Mandarin Orange) that we found at marc's. Sooo good. We used chicken and added zuchinni, carrots, and orange segments. Served over rice.

Tomorrow I am thinking something with ground beef or pot roast. Not sure.

Dinner and Breakfast at DSis's - was babysitting my adorable nephew.

Lunch: Fritos (pantry) topped with Chili (pantry) and Cheddar Cheese. Yummy and warm on a freezing cold day like today! :upsidedow

Tonight will be "Cocktail Friday" at my house - a couple girlfriends are coming over for appetizers and drinks. :goodvibes

Breakfast today was a bagel with cream cheese.

Lunch was out today while I finished up the Christmas shopping.

Dinner is leftovers, anything in the fridge that is not spoiled is up for grabs.

I did do a little shopping at Aldi's but mostly for items to make chocolates on Sunday.

turkey roast:sick: summer squash, fresh green beans..... cookies for desert

well I finally made the ham casserole that I planned two days ago. Used up quite a few things since it was a hodge-podge:box of pasta, leftover ham, frozen veggies and bread crumbs that had been hanging out in the pantry for way too long. Let's hope it turns out fine. I'll report back with the results later :rotfl:

I LOVE this thread! I wrote down some dinner ideas ... and I would love to try it out.

I think I am going to commit for two weeks ... I don't know if we have enough stuff, but I'm sure we can try.

So ... here it goes.

12/5 plan for dinner is blueberry pancakes, and possibly turkey bacon.

This board is great at helping me plan my meals.

Also thanks to the eat at home blog I found some great new recipes to try

So this week we have

Today spaghetti and sauce
Sunday ham steaks
Monday chicken and rice casserole
Tuesday soup and sandwiches
Wednesday Pork something?
Thursday leftovers
Friday honey Dijon chicken

Tonight I am finally making the Potato and Double Corn Chowder soup I have been wanting to for weeks now. We will have salad with it.

Then for the rest of the week we will have

Pot Roast
Chicken lemon pasta with roasted zuchinni and grape tomatoes
Macroni and cheese
ground beef tacos
chicken and dumplings
pork stirfry

We will of course have sides with these but I am not sure what yet.

I can see the back of my freezer! This challenge is great. :thumbsup2
Lunch - finished up the last of leftover meatsauce that we had thawed for dinner the other day.
Tonight's dinner: Threw some frozen chicken breasts in the crockpot with a jar of Indian-spiced sauce. I'll add some frozen peas or other veg when it's close to done.
