Pre-holiday pantry challenge

we'll since I have tons of meat and poultry in the upstairs freezer ... I want to start making a dent in it..... we are not big meat eater,mostly pasta..........

so today I pulled out the slow cooker and threw in some boneless chicken thighs and breast.......... 2 boxes of green giant teriaki veggies and 1/2 bag of green beans added soy sauce and spices and will serve with rice........

total cost=$6.04 and leftovers for lunchs during the week

$2.24 thighs
$3.00 breast
.80 teriaki veg
.00 green beans
.00 rice
 
Breakfast today was a chocolate chip muffin I made late last night from a few pouches in our pantry and hot chocolate with whipped cream (healthy I know).

Lunch is boxed mac and cheese that I am adding frozen veggies to.

Dinner is spaghetti with meat sauce and garlic bread. All from the pantry or freezer.
 
Thankfully, the Scotch Eggs are yummy! :goodvibes

Banana Bread is in the oven...

Rice Krispie Treats look better than they taste, I fear - I mixed in some peanut butter and topped with a Hershey's Kiss. :)

Next up: shredding zucchini for freezing. :thumbsup2
 
I started the challenge on Saturday and I am doing pretty good so far.
Sat. night I baked a big pack of chicken breasts, made a big pot of chicken stock and made homemade bagels.
Dinner Sat - chicken, rice and green beans
lunch Sun - bagel sandwiches
Dinner Sun - chicken pot pie
lunch today - grilled cheese and tomato soup
dinner today - chicken noodle soup (last of the chicken from Sat) and salad

I went to the grocery store this morning and spent $6.20 on bread, bagged salad and onions. Should last a few days.

I am down to my last pack of chicken breasts from the freezer. I will do something with them in the crock pot on WED. Tonight we had meatloaf from the freezer and au gratin potatoes from a box. Not much left in the freezer to cook for dinner the rest of the week.
 
Did the BBQ pork sandwiches, and Suddenly Salad last night. That is today's lunch, too.

Tonight will be the Meatloaf, Cauliflower and boxed potatoes.

Wednesday is Pork Chops, Squash, and packaged noodle dish.

I need to go stock up no fresh veggies. I am also going to buy a chicken to use in some casserole type dishes to use up the abundance of frozen bakery and some chicken broth. I think I have at least 10 cans of broth. I have no idea why!

Also, in the shopping event will be the stock up for Christmas Day buffet that we host. It won't be an inexpensive shopping trip but I hope to finish December less than in years prior. I will let you know at the end of the month!

Tonight is youngest dd's band concert so dinner has to be quick and easy. I am thinking tuna sandwiches and soup...both from huge stockpiles of both in the pantry!
 
Posted this in the NoBuy thread but had to share here. We have decided to do this challenge and started this weekend. Told DD we would be eating out of the freezer and she said, "Can you at least heat the food? Otherwise it will be cold." DH & I had a good chuckle over that! We just explained that we might be eating some different combinations of food but that I would heating it up. She laughed at herself when she realized what I meant.

Schwans is my downfall. I love the convenience. Anyway, we ate Augratin potatoes, roast pork and brocolli... all from the freezer. Tonight we're having TV dinners- crazy night at our house. Tomorrow I am slicing up some potatoes, onions and kielbasa....

I have some pork steak I need to do something with... any ideas?
 
Today we are heading out for dinner before we do our grocery shopping for the week. We have coupons for Steak and Shake and I am in the mood for a burger.

Tomorrow night will be campfire stew packets (ground beef, potatoes, carrots wrapped in foil packets and cooked in the oven) with salad.
 
We didn't eat the chicken legs we supposed to on Sunday or the sloppy joes last night ( last night the school board went over 5 hours), so we are having sloppy joes tonight and i threw the chicken legs in the oven to bake and we will have them tomorrow.
 
I cooked up some acorn squash & parmesan risotto and some mushroom sauce to go with my puff pastry.

I'm exhausted from cooking. I've been using up pantry/freezer items in combination with my weekly produce, but man, I need a break! :upsidedow

Time to eat all these meals I've been stashing in the freezer. :thumbsup2
 
Last night I made 4 different frozen pizzas I had in the Freezer.... 3 were smaller versions

1 tombstone cheese ( free after rebate)
1 Dr Oekenter spinach (.99 after coupon)
1 Dr Oekenter Vegetable (.99after coupon)
1 Dr Oekenter cheese pizza (.99 after coupon)


2.97 total for dinner and enough leftover for lunch today
 
I just did a deep freeze and fridge freezer inventory and I don't need to buy meat for a VERY long time! I'm hoping to save lots of $ over the next few months only having to buy the extras to finish dishes.
 
12/5 plan for dinner is blueberry pancakes, and possibly turkey bacon
12/6 - dinner at my parents
12/7 - homemade pizza (yum!)
12/8 - Macaroni with hamburger (this is one of my dd's favorite meals, and I think it's gross. LOL ... since she clears her plate when I make this, I do it everyonce in awhile for her). I had a big ol' bowl of veggies for dinner.

Today we won't be eating at home ... don't know what the plan is really. We're going to do the Santa thing and head over to another mall with a snowglobe display :confused3. I have bbq chicken cooking in the slow cooker for my lunch.

I made a big packet of turkey sausage and biscuits and froze them and that has been my breakfast lately. I have saved SO MUCH money not going to McDonald's ...

I spent $31 at Aldi's last night getting some basics - milk, cream, yogurt, fruit, salad, chicken, butter, canned soup for some casseroles, canned tomatoes for chili, paper towels, whipped cream cheese and some coffee. I also stocked up on some holiday ingredients - 3 cream cheese, 3 sour cream. I might have missed some things.

Today is lunch at work. It is our holiday party. DH will have leftovers.

Tonight is pork chiops (at least that is what I think is in the foil package dug from the freezer), acorn squash and noodle package.

Last night was chili cheese fries. Tonight I am making homemade mac and cheese with the left over cheese. This always goes over well with the girls:cool1:
 
Last night I used up the last chicken breast, the last box of chicken tettrazini (.50 on sale!), and the last 1/2 a bag of broccoli for dinner. Yay!!

Tonight it's a hodgepodge of sorts. Youngest dd wanted the leftover chicken noodle soup, please, help yourself!! The rest of us will have chicken patty sandwiches, the last of a bag of tator tots and a can of baked beans (.25 stockup pantry item! I actually think that's my last one!).

We did splurge last night and bought a ton of the Southern Comfort egg nog we love. But, I consider that seasonal spending...not groceries! :santa:
 
Last night we did some grocery shopping. We also went out to dinner but instead of Steak and Shake (it was so crowded) we went across the street to our favorite chinese place and ate there. It was cheaper than steak and shake would have been and we had leftovers for today's lunch.

Tonight is campfire stew and salad.

Tomorrow we might be headed over to my Grandma's to make chocolates if the weather is okay.
 
Last night we had crock pot chicken divan, yum! tonight was pork chops from freezer. Kraft mac and cheese (DD* had a hot dog instead), and can of green beans. The freezer in the basement is almost half full, and the extra pantry in the basement now has a door that can close! Slow progress, but progress!:worship:
