Pre-holiday pantry challenge

We have a snow day today, and had no power all morning and could'nt get out on our road so we definately ate out of the fridge & pantry:rotfl:. This is the 3rd snow so far in Oct - we got 12 inches last night (Nebraska). Hopefully going to inlaws for the weekend if the snow plows come through. Will be back Sun. to continue the challenge:thumbsup2.

lattemom - That is just astonishing!! It seems wayyy too early for snow. It makes me want to cook quarts and quarts of soups and chilis. :)

Do you put the biscuit/crescent dough in the crockpot? Do you put it in in the morning? or a while before you want to serve?

I decided to use up some chicken breast from the freezer, so I put everything in the crock last night and set up the crockpot this morning. I layered chicken breast, then taco seasoning, then canned crushed tomatoes and frozen corn. I have no idea how it will turn out. No recipe. Just hoping for the best. :)

Like someone else said, I put the crescents in about an hour before we eat. I still leave it on low and they cook just fine. I've found that crescents work much better than biscuits because they're thinner. Everything else I put in on low for 8 hours.

Cam - as the previous person stated, it doesn't matter if it is low or high as the crock won't heat up that much more during the hour. The thinner the biscuits (or use crescents), the quicker they cook. I always cut my biscuits.

My favorite crock pot cook book is the "Fix it and Forget It" cookbook. There are hundreds of recipes and variations. Crock pots are a great way to use up leftovers or that hunk of meat you don't know what to do with!

My old crock pot standby:
Beef roast
2 cans cream of mushroom soup (one if you have a small roast or don't like a lot of gravy)
1 packet onion soup mix

Mix the mushroom and onion soups together. Add about 1/2 can water to thin it out. Pour on top of roast and cook 8-10 hours. The meat will shred beautifully or you can slice it. I usually shred it and serve with rice or noodles.

OK, last night used up bread, a half bag of frozen blueberries in overnight baked french toast for "breakfast for dinner".

Tonight was frozen meat sauce from last month.

Out of town for the weekend

Next week planning to use from freezer of pantry...

pork roast from the freezer with potatoes on hand

salmon with a rice packet

Chicken enchiladas made last month.

Thats as far as I got. We'll see if I stick to it! :lmao:

Hi, OVERNIGHT Baked French Toast?? Recipe PLEASE!! thanks, Joan

Tonight's meal was roast chicken from a frozen chick and rice pilaf from the panty and carrots from the fridge.

Hi, OVERNIGHT Baked French Toast?? Recipe PLEASE!! thanks, Joan

I'm with Joan. MUST have this recipe!!

Oh gosh, I'm out of town now but as soon as I get back I'll post it. It's easy and uses butter, brown sugar, any kind of fruit, and of course bread, eggs and milk. I make it in the morning and its ready to pop in the oven when I get home.

I'm not the PP but I love making baked french toast. Here is the recipe I use. http://www.foodnetwork.com/recipes/...casserole-with-maple-syrup-recipe2/index.html

But you can search for baked french toast and find other recipes with fruit in them in case you don't want to wait for the the PP to get home from her trip! :goodvibes

I need to join!!! ok my kids had the FLU and I had to miss work with no pay for a week.. Also we spent so much money on drinks ,meds, ice pops, laundry soap, toilet paper and other stuff, that when I just went shopping I had to buy just basics It cost me 200 for the next 2 weeks... so Count me in Im broke really trying to budget

ok here is what we are eating today
snacks.. Eat the L debbie swiss roles, that my dh bought :confused:knowing Im trying to loose weight...so that is a MUST for the kids for a snack today

left over turkey that we have from dinner last night. Im going to do hot turkey sandwhich with can fruit cocktail and frozen broccoli from deep in the freezer:rolleyes1

Lunch was cheddar cheese sandwich and carrots

grilled sandwiches for lunch today

Pitch in tonight with friends. I'm using stuff in the crockpot from the freezer as my contribution. :thumbsup2

We'll probably do leftovers tonight and I may try to put some kind of side dish together out of the mountain of frozen veggies I have. Oh yeah, and we'll eat candy :)

I made a lasagna for tonight because I have company. I didn't have the right type of noodles so I used spiral ones. A noodle is a noodle right?

I had the cottage cheese, eggs, 2 kinds of shredded cheese, spiral noodles, spaghetti sauce, 2 pds of ground beef, 2 onions, several dried mushrooms and 3 cans of diced tomatoes in my stash. It made a NICE dent! (and this lasagna weighs 10 pounds :lmao:) We'll be eating on this all weekend long.

Today will be leftovers from the week and tomorrow is Pot Roast in the Crockpot. I already have the meat defrosting in the fridge.

The kiddos were sick this week, so I didn't get to post everyday.
I am proud - this week we had
*Pasta and sauce, sausage and meatballs - pasta from pantry and sauce made from pantry, sausage and meatballs from the freezer
*Fish, rice and peas - all from freezer
*Soup - from either pantry or freezer
*Hot dogs - from freezer (did buy the rolls as we had none)
*we ate left overs on some nights and tonight went to a friends for a pre-trick or treating pizza party - I made cookies from the pantry!

This week when I went to the store I bought milk, yogurt, cheerios (no cereal left in the house), hot dog buns, apples and maple syrup.
I can't wait to try this next week!

Happy to report all the food was a hit and I did it all from the pantry! We went thru dinner, and world series game party!! That made a huge dent in the freezer! My husband just told me he is going away for three days for work which while I will miss him makes this much easier, he is the most picky and the complainer so three days of freezer eating here I come!! :cool1:
