Pound of Ground Beef Meals?

I'll have to try these recipes, they look so good and will really stretch the ground beef. It seems a pound of ground beef doesn't cut it for my family anymore.

One of our quick and easy standbys is Zatarain's Dirty Rice mix. Just brown the ground beef and mix with the rice mixture and cook, very easy. I serve it with fresh green beans and homemade cornbread.

I also make the Asian vegetables mixed with the ground beef and Ramen, but lately, instead of the Ramen, I've been using the Barilla Piccolini pasta. I season the beef, vegs. and pasta with real sauteed garlic, Asian seasonings, rice wine vinegar, soy sauce and siracha for a kick. The pasta for us makes the meal stretch a little further than the Ramen and is a little healthier. The last time I made it, I buttered the pasta before mixing with the meat and vegetables, it was a little dry without it the time before. It was a hit with my kids.

All-American Chili


This all-American chili recipe is perfect for an outdoor cookout but can also be made on the stove for a comfort classic on a cold day.



Yield: 8 servings (serving size: 1 1/4 cups chili and 1 tablespoon cheese)


6 ounces hot turkey Italian sausage
2 cups chopped onion
1 cup chopped green bell pepper
8 garlic cloves, minced
1 pound ground sirloin
1 jalapeño pepper, chopped
2 tablespoons chili powder
2 tablespoons brown sugar
1 tablespoon ground cumin
3 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 bay leaves
1 1/4 cups Merlot or other fruity red wine
2 (28-ounce) cans whole tomatoes, undrained and coarsely chopped
2 (15-ounce) cans kidney beans, drained
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese

Heat a large Dutch oven over medium-high heat. Remove casings from sausage. Add sausage, onion, and the next 4 ingredients (onion through jalapeño) to pan; cook 8 minutes or until sausage and beef are browned, stirring to crumble.

Add chili powder and the next 7 ingredients (chili powder through bay leaves), and cook for 1 minute, stirring constantly. Stir in wine, tomatoes, and kidney beans; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally.

Uncover and cook for 30 minutes, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese.

Note: Like most chilis, this version tastes even better the next day.

Does anyone have a good recipe for taco salad? That's something that the kids love, but I've never made it. Since it uses ground beef, I thought I'd ask here. Thanks!
 
Quick soup (use to call this five can soup ie (can of tomatoes, can of diced potatoes, can of corn, can of green beans, can of boulion)

Take your ground beef and put it in a carton of beef broth (about 4 cups) and you can add water if you think it's a little strong but basically broth to cover all the ingredients. Add either one can of diced tomatoes or one to two chopped fresh tomatoes. Then add any veggies you like canned or frozen. Season with salt, pepper and I personally like a little worchishire sauce or garlic salt. Simmer then add some precooked noodles, rice or barley. Yummy soup and really good on cold days with some bread or cornbread.

Pasta

Take you favorite noodles and sauce (egg noodles and brown gravey, mac and cheese), Add your pound of browned meat and some veggies.


Popovers

Mix brown meat with about half a jar of pasta sauce and some grated cheese. Take dough (biscuit, or preformed pizza dough in a tube/crescent rolls, etc) and make a med sized circle, little bigger than you hand. Put a couple of tablespoons of meat mixture inside fold over dough and seal aroung the edges with a fork. Bake them till dough cooks and turns golden brown. Use the rest of the sauce to serve on side or over the top.


HAMBURGER POTATO CASSEROLE
1-2 pounds Hamburger meat (depends on how much meat you want I use 1 pound sometime 1 ½)
1 bag frozen southern style hash browns
1 small can each:
Cream of celery
Cream of mushroom
Broccoli/Cheese soup
(I get the 98% fat free varieties and really you can use any combo of cream soups)
1-2 cans green beans (or any vegetable you like I’ve also used frozen broccoli)
Shredded cheese (I use light cheddar or cheddar/jack mix)
Put your hash browns on a sheet pan lightly salt them and put them in a low oven 350 or so to start the cooking process. You don’t want them done, just unfrozen and firm, if not they get soggy in the casserole. After you take them out leave your oven on and increase heat to 400.
Brown you hamburger meat with whatever seasonings you like (I use salt/pepper, worcestershire sauce, garlic and onion powder).
In a bowl mix the three cans of soup plus one half can of water. Add the vegetables and half the potatoes. Stir together.
In a 9X13 cooking pan, put the ground beef on a layer on the bottom. Pour the soup mixture over the top. On top of this add the other half of your potatoes. Put in the oven and cook until the mixture is bubbly and the potatoes on top are done, maybe 20-40 minutes depending on oven. Don’t overcook the top because you’re going to broil it in a minute.
Remove your pan turn off the oven and sprinkle the top of the casserole with shredded cheese. Put the pan back in the oven and turn on your broiler, leave there until the cheese is melted and light brown.

Quesadilla

Brown you meat with taco seasonings.

You will also need small flour tortillas, shredded cheese


take one tortilla and put it in a lightly sprayed frying pan on med heat and put a little cheese then, meat and then more cheese on the top of the tortilla, when it's toasted and the cheese is melty add a second tortilla to the top and flip it over to toast the other side (cheese on both tortillas helps it stick together).

Other than that the only thing we do is hamburger helper or this strange tomato (one can sauce one can diced then seasonings) and beef with elbow macaroni that we called Goulash, but I"ve seen different recipies for that name and names for my recipie.
 

My Shepard"s pie is always from leftovers. Any left over hamburger meat will work I use left over taco meat, meatloaf, sloppy Joe or spaghetti meat/sauce. Put that in the bottom of the pan. Then use either all your left over vegetables from the week or a bag of mixed vegetables. Top with shredded cheese and mashed potatoes. Bake at 350 until warm.
 
We eat taco rice. Drained cooked GB (or turkey), a jar of salsa (kroger will have 10 for $10 sales on Chico's), rice, drained & rinsed black beans, corn and chopped bell peppers. Sometimes I cook it all together, sometimes I'll make the rice in the rice cooker and mix it all at the end and heat it through.

I thought my family was the only one who ate taco rice! My BIL introduced us to it after he was stationed in Japan and that was the take on Tex-Mex he got there. We make the rice separate, cook the meat and drained black beans with taco seasoning, and then layer everything on top of the rice.

This is how I do Taco Salad -

Make taco meat with less water than called for in the directions. I use 1/2 cup water instead of 3/4 cup. Chill.

Mix salad greens, cheese, taco meat and regular doritos. I use taco sauce as the dressing. I serve with sour cream on top.

I only make up as much as we are going to eat. This salad does not "hold" well. The chips get soggy and so does the lettuce if not eaten fairly quickly.
 
this is one of our family favorites:

1 lb hamburger meat/browned then add
1 pack of taco seasoning mix
1 c of sweet corn or shoepeg
1 c of refried beans
1 c of chilli beans
1 c of rotel

mix all together and it makes a lot and serve with tortilla chips with fixins (sc, cheese, taco sauce, black olives) or serve on soft tortillas.
 
Mexican Shepard's Pie.

Brown 1 lb of ground beef and drain. Add a package of taco seasoning mix and 2 tablespoons of water. Layer in the bottom of oa 2 qt casserole. Layer in a cup of shredded cheese, package of frozen corn (defrosted) and top with mashed potatoes (I make mine and use 5-6 medium potatoes. If you're using instant I would use 6-8 servings). Bake at 350 for 30 minutes. I usually serve it with salsa and sour cream and a side salad.

You can also make this with ground chicken or turkey and it come out fine.

Not so Sloppy Joe Casserole


Kids and adults alike, love this!)

Ingredients:
2 (10 ounce) cans refrigerated biscuit dough
1 pound ground beef
1 (15 ounce) can sloppy joe sauce
1 small onion, chopped (optional)
1 small green bell pepper, seeded and
chopped (optional)
1/4 teaspoon garlic salt
1/4 teaspoon ground black pepper
2 cups shredded Cheddar cheese

Preheat the oven to 350 degrees F (175 degrees C). Cut the biscuit dough into quarters and press to cover the bottom of a 9×13 inch baking dish.
Place the ground beef into a skillet over medium heat. Cook, stirring to crumble, until no longer pink. Add the onion and bell pepper about halfway through, cooking and stirring until tender. Drain off excess grease and stir in the sloppy Joe sauce. Season with garlic salt and pepper. Pour the mixture over the biscuits and spread to cover evenly.
Bake in the preheated oven until the biscuits are cooked through, about 20 minutes. Remove from the oven and sprinkle the cheese on top. Return to the oven until the cheese has melted, about 10 more minutes
 
My kids like Cowboy Beans. Brown meat and mix with a can of baked beans (we like Bush's Country Style). Bake in small casserole dish until heated throughout.

Although not really a meal, we also do alot of Rotel Dip.
1 lb ground beef, browned
2 cans Rotel
large block Velveeta, cubed
Mix all in crock pot and simmer on low until cheese is melted. Serve with tortilla chips.

This is very similar to what my family refers to as Grandpa's special (because that is what Grandpa made ;)). Ground the beef add a can of pork and beans till heated. Then he would slice up some potatoes and fry them up in a cast iron skillet. Now I'm not that talented, nor do I have a cast iron skillet, with the potatoes so we just make Ore-Ida Waffle Fries.

Now this is to taste, DH will put in a little, the kids avoid it all together, and I put in a ton (thanks Grandpa :love:). To my bowl of meat and pork and beans I add Frank's hot sauce! Gives it some zip. For the record, I hate pork and beans, but I love this! :lovestruc
 
A family favorite this time of year is homemade vegetable beef soup. I prefer to make it with leftover roast, but the kids prefer the ground beef version. I just cook the beef, add a little onion while cooking, then put in the crock pot with frozen or fresh vegetables. I add a can of beef broth or buillion, a can of diced tomatoes, and a little water. I also add a secret ingredient...a few squirts of ketchup and occassionally a little texas pete(if making for adults). My husband's nephew and a friend's 3 sons love my soup...I think it's the ketchup!

Homemade Chili is popular, too. I use 2 lbs. of cooked ground beef, 2 cans of diced tomatoes, a can of kidney beans, an onion, a small greeen pepper, chili powder, ketchup and/or chili sauce. I simmer for a few hours in large crock pot. I make it a meal by baking potatoes and serving a salad and Texas Toast. We top the chili and potatoes with cheddar cheese and sour cream.

There is a copy-cat version of Pasta Fagioli soup from the Olive Garden I make. The online recipe is huge, so cut it in half and simmer in the crock pot for a few hours. I make a salad and serve it with Olive Garden dressing and breadsticks.

There is a basic homemade spaghetti sauce I make that I turn into just about anything. Brown 1 lb. of lean ground beef, drain, and add onion and 1-2 cans of stewed tomatoes(chopped up). Add basil(I have a plant) and oregano, and a few squirts of ketchup, and let simmer while you make the spaghetti. Sometimes I add 1.5 cups of water and 8 oz. of pasta to the sauce, and simmer until pasta is done for a homemade hamburger helper-type dinner(think beefaroni). For "pizza pasta" I lay pepperoni on top the last few minutes of cooking, and top with shredded mozzarella and parmesan cheese.

There are alot of things you can do with ground beef and taco seasoning. I layer the cooked taco meat onto a large soft flour tortilla in a pie plate, followed by salsa, and shredded colby jack cheese. Place another tortilla on top of that layer, and add meat, salsa, cheese. Cover with a third large tortilla and bake for 20 minutes at 350 degrees. Sprinkle with additional cheese, and cut like a pie. We top it with sour cream, additional chese and salsa, and lettuce and tomatoes. Sometimes I add corn to the meat, or serve corn as a side dish. Black beans or rotelle tomatoes are good mix-ins as well.
 
I made Salisbury Steaks last night and I see someone has posted a link to that recipe on here... I made 9 "steaks" and between my ds and dh, they ate them all except 2 (1 I ate, 1 leftover...).

I put the meat together sort of like I was making meatloaf (egg, breadcrumbs, onion powder) and then added some worcestershire sauce and a couple of spoons of steak sauce, formed them into medium size patties, then browned them in my electric fryer, made 2 packages of brown gravy, added the gravy to the fryer, and let that heat together for a few minutes.
 
I love my hamburger soup. I brown the beef (I use the very lean kind, then I actually drain and rinse it in a collander to get the extra fat off). The broth is just beef broth (reduced sodium if you prefer), then a can of V8 (the size of a coke can -- also comes in reduced sodium). I add whatever veggies I have fresh or frozen, such as cabbage, broccoli, cauliflower, baby carrots, peas, corn, mixed veggies. Sometimes I'll throw in a handful of noodles at the end, or potatoes are good, too. My whole family loves this soup, and it's chock full of lean protein and veggies!
