Everybody has their thing, this is mine. I won't use the handicapped stall in a bathroom if I'm alone either. I'll wait until the next regular stall becomes available.Obviously, for the OP, the use of the companion bathroom can make the difference between a good trip and a nightmare. If I were alone and able to use a regular stall, I couldn't in good conscience occupy a bathroom knowing it is really needed for someone like them who just can't use a regular stall.
If judging others is your "thing" that is up to you. But as I pointed out the companion restroom is a handicapped restroom. You may not "see" a reason for a single person to use it, but they may still have a valid reason.
