Pot Roast Recipe for Slow Cooker

So my FIL is one of the many government workers home and he is driving my MIL nuts. So my DH and I have invited them over to dinner Thursday to give them a break from being around just each other.

Now my DH is the known chef in our house, but I've been really trying to become a better cook and I told my DH in no uncertain terms I'm making this dinner. We are having pot roast, and with my schedule and the time my ILs like to eat dinner it has to be a slow cooker recipe. Problem is while I know the basic ingredients of a pot roast (chuck roast, potatoes, carrots, celery, onion), I know nothing about how to make a delicious one.

So if anyone has a great recipe for one please share it. Also other fabulous slow cooker recipes are welcome as I'm trying to get better about preparing meals at home.
 
I read a recipe that had 1 pkt italian seasoning, 1 pkt onion soup mix and 1 pkt brown gravy - mix with 1 cup water and pour over roast and let cook all day. Sounds pretty yummy to me. I will try it the next time I have an english roast in the freezer.

For mine, which is tasty, I usually use french onion soup over the top, add my veggies and let it cook. We like it. Simple but tasty.

I use Lipton onion mushroom soup as a rub, quick sear in a pan with olive oil, toss roast in crock pot add veggies which are chopped onion, whole mushrooms, potatoes, carrots. I would NOT add celery. Celery is stringy for one and it has bitterness. Fine for oven roasting, not good for crock pot slow cooking.

If the roast is too big I cut it in half.

You really don't have to sear or add a rub really if you don't want. You can just season it with your favorite herbs/spices.
 
The three envelope recipe is really good....Good Seasons Italian Dressing Pack, envelope of onion soup mix and envelope of brown gravy mixed with one cup water.

I think the trick to a great slow cooker recipe is to cook all day, then slice the meat and put it back in on warm cycle till you eat. If you just slice it and serve, the meat is dry.

For pot roast, I like to buy the biggest chuck roast I can find. It is a fattier cut and cooks down, but has the most flavor.
