We almost canceled our trip two weeks ago, but ended up going because we had 2 vaccinated 5-year-olds who were really looking forward to it, plus kids in their class had gotten the virus and people at work, so we figured we may actually be "safer" to go to Disney. We kept the kids out of school the week before our trip which was the week after the holiday break and I think that was a great idea since kids came to school with the virus, as it turned out. We wore KN95/KN94 masks inside and out (even the kids) and used hand sanitizers often. We only sat in a couple of places to eat our counter service meals and had no ADRs. We were a group of 12 with a non-vaccinated 2 year old and one adult (who distanced himself as much as possible from the rest of us or wore a mask). We had a good trip - safe travels (by van), great weather and did all the parks. BUT, no one is in a rush to go back (except me). The parks were still crowded (in January!), though we did have a couple of lighter crowd days, and we don't like how Disney is charging for fastpasses, so we waited 60+ minutes for many rides/attractions which we have never done before. We didn't do a lot of attractions because of time and missed a lot of little parades/things because of the time we were in line and slow travels with 3 in strollers.
I think that, whenever you plan to go back, there are so many factors that can make or break a trip in addition to the virus, as there always have been (travels, weather, colds/flu, crowds and now $LL/G+).
Good luck and have fun with planning! Then pray, cross your fingers and just go!
