Lemon Chicken with Orzo


4 chicken breasts
1 cup lemon juice
2/3 cup olive oil
1 cup fresh parmesan

1 can artichoke hearts
1can or similar amout of fresh mushrooms

garlic, salt, pepper

cut up chicken into cubes and add lemon & oil and mushrooms & garlic bake at 350 for 35-45 minutes. add artichokes 1/2 way thru

cook orzo al dente drainand add to chicken mixture mix and sprinkle w/ cheese return to oven for about 10 mins. yumm
 
pot roast or rump roast
one can cola
one packet lipton's beef onion noodle mix

throw in crock pot on low for 6 to 8 hours

Make with mashed potatoes -- the cola makes a nice au jus gravy

Here's an easy one for you:

Chop Slop
1 pound ground beef
1 can cream of mushroom soup
1 can milk (use can from the cream soup)
1/2 c. sour cream
1 small onion chopped
salt/pepper to taste

brown meat. drain. add chopped onion, soup, milk and sour cream. mix well and simmer. serve over instant mashed potatoes with a veggie and a roll or garlic bread. there should be a nice gravy. i've also added a can of corn and that was good.
 

This is really quick after the marinating part. It is delicious and VERY low fat.

Teriyaki Marinated Pork Tenderloins


1 cup low sodium soy sauce
1/4 cup rice wine vinegar
2 tsp ground ginger powder
1 or 2 pork tenderloins

Mix first 3 ingredients together and put into well sealed ziplock bag w/tenderloins the night before or the morning you want to cook these. (You can even freeze the meat in this marinade.) Refrigerate until ready to cook.

Remove tenderloins, discard liquid. Cook whole on grill (high for gas grills) for about 10-15 minutes on each side, until pink in the middle. (Until they just seem to be "firm" when pressed.)

Remove from grill, let rest for 5-10 minutes. Slice into medallions about 3/4 inch thick. Serve with your choice of side dishes.

Serves 4-6 people, depending on how many are on ATKINS!

This marinade is delicious on chicken breasts and steaks as well.


For the crockpot, my favorite is:

Cream of Mushroom Pork Chops

2 pork chops for each serving
1 can of cream of mushroom soup for every 3-4 pork chops

Slightly brown the pork chops in a skillet. Deglaze skillet with a little white wine or water. Place chops in a crockpot, and pour degazed liquid and cream of mushroom soup over them. Cook on low for 4 or 5 hours.

Serve over rice...

How much easier (and very delicious) can that get????
 
not reallly a fast serve,, but its goodd,,
Chicken pot roast

3 cloves minced garlic,
1/2 small onion minced
1/2 cup margarine
1 med fryer or roasting hen, whole
3 diced potatoes. large, (about 1 cup per person eating)
1 lb small peeled baby carrots
1/2 small onion diced
2 tbs lemon juice
1 medium orange peeled and crushed( i use food procesor)
1/2 cup honey

carmelize minced onion and garlic in margerine,
use this to brown or sear the exterior of your chicken
once browned off,,, take the garlic and ponion mixture and add 1/2 to inside of chicken, (like stuffing) dress outside of chicken with remaining onion and garlic.. drizzel 1 tbs lemon juice over chicken, bake in large iron pot for 1 hour,, or till chicken is almost done, remove pot,( i use an 8 qt dutch oven ) add veggies, seasoin to taste, salt pepper garlic opwder etc personally i use salt pepper and tonys cajun spice then pour crushed orange and rest of lemon juice over top, add water to stew veggies, let boil on top of stove till potatoes are done and chicken should be finished by then too.



same general recipee works well with beef,, buyt i prefer to boil beef roast instead of baking it,

orrr smothered pork chops with garlic and butter, served with mashed taters and gravy, and home made butter horn rolls ,,, of course that isnt a real fast meal either
 
Chicken and asparagus



In skillet brown package of boneless, skinless chicken breast(of course a little oil and salt/pepper)

place 1 1/2lbs (or more/less) asparagus in greased baking dish. Arrange chicken over asparagus. In seperate bowl combine:
1 Can cream of chicken soup(i've also used cream of mush)
1/2 c mayo(I use light)
1 tsp lemon juice
1/2 tsp curry powder(I use a bit more)

Pour over chicken/asparagus. Cover and bake on 375 for 40 minutes. Sprinkle with cheese if desired!(usually shredded mozz. or cheddar)

This is REALLY good!! Even my 5 yr old loves it!! Even the asparagus!



Zucchini casserole
This is a great side dish or served over pasta!!!

2 zucchini (peeled)-again I usually use more!
1 8 oz. can tom. sauce
1/3 c parm. cheese( more or less to taste!)
1 1/2 tbsp. olive oil
1 clove garlic
1/2 tsp. oregano
1/8 tsp. pepper


layer in micro safe dish as sauce/zucchini/sauce/zucchini/sauce

cover and microwave for about 13 minutes

cover with shredded cheese and micro for another 3 minutes!! Again ds LOVES this!!

Beer Up The Butt Chicken

1 whole chicken
1 tall can o' beer (16 oz. tallboy)
olive oil
4 cloves garlic crushed
salt and black pepper

your favorite beer (for marinating the chef!)

seasoning for chicken (or use a seasoning blend or your own favorites):

4 cloves garlic, crushed
fresh basil
a pinch of cayenne
salt and pepper

Start with a hot grill (coals all white and ready to cook). Drink about 1/4 of that can of beer. Set it aside 3/4 full and have a couple of full ones, real beer this time—no sissy canned stuff.

Get the chicken ready for cookin'. Trim some of the fat, get rid of the giblets (here kitty kitty!). Rub liberally with your favorite meat rub. I prefer olive oil, basil, lots of fresh pressed garlic, salt, and a pinch of cayenne. Some folks like Zartarain's or some such store bought concoction, but whatever.

Get a can opener or some such tool and open up the top of the can and drop in the crushed garlic.

Oil up the can and lower that chicken over top of it. The beer can goes into the chicken's body cavity and allows the bird to stand upright.

Cover your grill and cook the chicken until its wings are loose and the skin turns clear. This is terrific with our garlic and potatoes or roasted corn.
