My apologies if this is not in the right spot........

I booked an 8-night stay at CSR a couple of months ago through AAA and opted not to include a meal plan or park tickets at the time.

With the recent announcement of free dining for selected stays, is it possible to get this or will I have to completely jump through hoops and re-do the entire reservation?

You have to book a package to be eligible for the dining plan (free dining or not)

I believe you only have to buy 2 or 3 day tickets to be eligible for FD, and since they don't expire until you use them (well 14 days after that) you could always keep them and use them for a later trip.

Your AAA TA should be able to change it... booking through them or through Disney directly won't make a difference

Your agent can do it, but:
1) Your current reservation for a room-only will be cancelled once the package is booked. Your deposit will be refunded, and you will have to pay a new deposit for the package. Room-only cannot be converted to package. It's a whole new reservation. (This will have no effect on any ADRs you've made.)
2) You may have to change resorts or room categories, based on availability under the free dining promotion. Each promotion has only a certain number of rooms at each resort which fall under it.
3) You will lose your AAA discount. You cannot "stack" discounts.
