Pork Chops AND...

I just made some "loaded" cauliflower yesterday. Cooked and mashed the cauli. Added some thinly sliced green onion, crumbled bacon, and shredded cheese. Then topped with a dollup of sour cream. Yummiful!

So OP, what did you end up making for dinner with your pork?

I seasoned mine with salt, pepper, and some rosemary, and then grilled them to absolute perfection. :)

I LOVE low carbing!

By the way, I knew Shake 'n Bake would have carbs, but holy cow, I never knew it was THAT much! :scared1:

This thread sounded so good, I had to have grilled pork chops for dinner tonight too! I served a big side salad with it and my kids had mac and cheese too...

It's dinner tomorrow night now... but I am thinking of doing the mashed cauliflower (DH went :sick: :snooty: when I suggested this, but we will be trying it) and asparagus.

Does anyone have a recipe for the mashed cauliflower? :confused3

Someone posted a recipe from food network higher up in this thread, but I didn't take a look at it.

I just steam mine really well (about 10-12 min. in micro) until really soft. Drain. Then mash with a... I'm not sure what it is I use... might be intended for pie crusts, LOL... but it works really well. Once mashed to the consistency you like, press a paper towel into the mixture to absorb any additional liquid. Then add butter... or whatever you would add to your potatoes.

Roasted cauliflower is really really delicious too. I drizzle olive oil over the florets, then sprinkle with salt. Roast at 450 degrees until golden brown (about 20-30 min. if FROZEN). I could eat this as a snack. :lovestruc

I always use frozen. So much easier. Just dump the bag into a microwaveable bowl, cover, and cook. :thumbsup2 I then add my green onion, bacon, cheese, and sour cream.

I also make a macaroni & cheese using cauliflower instead of noodles. :idea:
 
Pork chops and dressing!!! YUM!! Make a pan of dressing and cook it with the pork chops on top!!! Have cranberry sauce and some green veggies with it!
