I just made some "loaded" cauliflower yesterday. Cooked and mashed the cauli. Added some thinly sliced green onion, crumbled bacon, and shredded cheese. Then topped with a dollup of sour cream. Yummiful!
So OP, what did you end up making for dinner with your pork?
I seasoned mine with salt, pepper, and some rosemary, and then grilled them to absolute perfection.
I LOVE low carbing!
By the way, I knew Shake 'n Bake would have carbs, but holy cow, I never knew it was THAT much!
