I know they haven't gotten to Tahiti renovations yet, but maybe running an extra fan in the room can dry it out while guests are not in it during day. They can also get temporary Hepa filter systems for problem musty rooms.
As for food service, this is my first time so I won't have Hawaii or old times to compare to. So far I've got to say Rosemarie has been very helpful in planning. I think as long as I get my morning coffee and some bottled water for the parks, a bagel for my kids, I'll be happy!
