While I am not a vegetarian I eat a lot of vegetables. I have never had any special order meals but I wanted to suggest the Boma and Tusker House buffets. Both have a lot of vegetarian options.

Not mine, but a friend who is vegan got a really awesome platter of tempura vegetables from Boma. (The chef that provided them moved on, I believe he now works at Ohana)

Sorry I'm not any help but I'm a vegetarian and I'm hoping that there's a lot of responses to this thread since I'd be interested in some of the special orders!

I'm Gluten Free and Vegetarian and on our last trip the Chef at Le Cellier did a special order that was Cream Chees mashed potatoes with asparagus, mushrooms, and bell peppers saute'ed in olive oil.

My other meals that were special orders were just gluten free versions of regular vegetarian dishes. Also adding to the list Crystal Palace will make you just about anything found in the Magic Kingdom. I got gluten free Mac-n-Cheese and Cheese Pizza there.
