Please help me pick my park days

I'm looking at booking my second Mommy and Me trip for this May (9-12) but having trouble figuring out which parks to go to on which days. It will be a short trip just me and one of my 4 year olds. 3 nights with 2 full park days and 1 short day (we fly out at 8pm on day 3 so maybe 6 hours in the park).

We definitely need a full day at MK and I'm considering Epcot and AK for our other days although not quite sure with the addition of RoL if I should plan for AK to be the all day park or not. Any ideas if RoL will even run every night or any guess on a time for the show?

My other issue is that easywdw has MK as the not recommended park both days we would be doing a full day. They are a Tuesday and Weds (5/10 & 5/11) and I'm assuming they are both not recommended perhaps because they have EMH? If that's the case I'm guessing it would be worse on morning EMH day than the evening EMH? And then of course both Epcot and AK are also the not recommended park on our departure day as well, so I can't seem to win with the crowd calendar for such a short trip.

The crowd level is listed as a 5 for each day so it's average crowds. Given that, I'm not sure how important it is to pick the "right" park each day.

You are right in thinking that Easywdw deters you from MK because of EMH. They usually do. If you're on property I think EMH is really beneficial. I know that's the most quiet time at the HM (it can get very boring at night when there are so few guests coming through)

I don't know your children but typically children don't enjoy the countries in EPCOT so you could certainly do AK and EPCOT in the same day. If RoL is fully operational, save AK for the night time. Crowd levels of 5 are pretty nice days. I don't see you having too many issues

I believe ROL is an every day thing? And assuming you don't have hoppers I would do 1 full day MK, 1 full day AK (or even a half day that runs into the evening to catch the new stuff and sleep in/hang out at the resort) and then a half day EP. If you can be up for morning EMH at MK then I would chose that day, if not go with the day that has evening EMH.
We somewhat followed the crowd calendars last trip but MK ended up being packed regardless and as long as you have fastpasses picked it shouldn't be too bad. I haven't gone in may before (Dec & Jan) but that's personally what I would do
