Please educate me on FP+ booking window

Good morning!

I booked one night onsite to take advantage of the 60-day FP availability prior to moving to Windsor Hills. It worked great yesterday, and I was able to book FPs for the 2 onsite park days (check-in and check-out.) When will the rolling window open for the rest of my offsite days? I looked this morning at 7am, but no more days were available to book. (We will be at the parks January 7-11, and I have FPs for the 7th and 8th, but the 9th did not show as available this morning.)

When will the rolling window open for the rest of my offsite days?

60 days from each individual date

You will be able to book for the 9th tomorrow, the 10th on Sunday, and the 11th on Monday

Since the rest of your stay is offsite, I believe you won't be able to book the rest of your Fastpasses until 30 days prior to check in for the offsite hotel. Have a great time - my dates are the exact same as yours!
