Planning another trip....Help!

So I just returned from WDW on the 7th of this month. We were there from the 1st-7th. The weather was perfect and until the last day of our trip the crowds didn't seem too bad. We were able to get 4th FP for 7DMT, FOP, Everest, Space, RnR. We had the dining plan for the first time and struggled to use all of our meals in the end. The only thing that we would have liked to change was having more downtime, but oh well.

Now I am planning another trip for next year. Now the trip has to be after the beginning of August (we have other commitments and need time to save :)). I was thinking of going back around the same time. I do wish we would have seen some Halloween decor. This trip will be my dad and I. He will do anything and probably even more than I will lol. I am hoping you guys can help me decide on a few things.

I was thinking of trying to do either MNSSHP or MVMCP, but which is better? We also will be deciding if we want to do Universal and how many nights we are planning on going for. I am thinking of 7 nights and 8 days. If we decide on Universal we will add another night for that.

Also, with Toy Story Land opening, I don't know how to even plan around that. My plan as of now park wise look like this:
Arrival day- just chill at the hotel
Day 1- Animal Kingdom
Day 2- Magic Kingdom
Day 3- Epcot
Day 4- Hollywood Studios
Day 5- ???
Day 6- Epcot and Hollywood Studios
Day 7- Magic Kingdom
Day 8- Animal Kingdom and then Depart

We will be able to park hop, and the night time shows probably won't be a priority for us, just depends on what my dad is thinking about. We are early risers and can stay up late.

I am obviously hoping to have some down time in the middle of the days if we can.

I am looking for all advice that can be spared!

Also a suggestion - Day 5 leave open as a non-park day (a resort day). There is more to do at the resort than you probably realize - the kids can have a blast just hanging around the pool and you will enjoy the day off to recover / reload more than you think. It will make those last days significantly more enjoyable.

Also do not forget about the water parks and Disney Springs!
 
MNSSHP is the best. I also would leave one day or two half days for resort activities like visiting the monorail resorts, or go to one of the waterparks. They are really fun. We always enjoy a trip to the Wilderness Campground.
 

Your plan looks good but have you thought of a rest day on day 5? On our trips the girls go into town and shop and I resort hop. Met a lot of nice CM's that way, learned a LOT about the various resorts and its just fun.
 
Thank you all for the tips! I have thought about a rest day, but usually when we are out there we want to be in the parks. I am thinking of probably having a later day in the park maybe on the 5th day.

I have done the water parks and am not a fan. I am not a big waterpark person though, it was fun, but I am not one to hangout there all day.

Disney Springs we will probably do dinner at one night, just waiting to book and make ADRs before I decide what night :)
