Hello All
I was at Hollywood Studios Galaxy’s Edge this year and had the Pirjanad Hot Chicken Tip Yip dish at Docking Bay 7. It was a great dish! I loved the spicy and I was surprised at how spicy the dish was for a Disney world park.
I have been looking for a copy cat recipe of the whole dish but it appears it is a modification of the Endorian Fried Chicken Tip Yip which is in the publishing Galaxy Edge cookbook. Although the modification is not.
The sauce is described on a fan site as “Pirjanad is a strong, spicy sauce made by members of the Mandalorian culture.”
Disney’s menu describes the dish as a Spicy Chipotle gaze/sauce. “Crispy Chicken glazed in a Spicy Chipotle Sauce and served with White Rice and a Relish of Sweet Corn, Shishito Peppers, Jicama, Plantains, and Cilantro”
The fan website goes on the describe the sauce as “Behind the scenes - Pirjanad was created by writer Mia Mesharad for her 2017 online tour piece, "Welcome to Mandalore." In it, lead character Ezgi Deshra uses a small bottle of pirjanad that she carries in her utility belt to add flavor to an otherwise bland New Mandalorian dish. As with many elements of Mandalorian cuisine found in Star Wars canon, the fictional pirjanad can trace it's origin back to the real world, having been inspired by sriracha sauce, a potently spicy chili sauce developed in eastern Thailand.”
I have sriracha, chipotle and piri piri sauces but none seems right so I thinking it is a special blend or Disney sauce made for or by them OR it is a specific sauce brand that they buy and use.
Any suggestions would be great on where it buy or how to make it at home. Or if some one has the recipe from the chef that would be awesome!
