Here are the afternoon tea recipes that I promised!
Ginger Lemonade
2 (1/2-inch slices) fresh ginger root
4 cups of water
3-4 lemons, juiced (depending on size)
1/2 cup sugar (or to taste-- I prefer mine without any sugar)
1 lemon, sliced (opt.)
- In a medium-sized pot, combine ginger slices, water and sugar. Bring to a boil, stirring occasionally. Remove from heat.
-Stir in lemon juice. Cool 15 minutes. Remove ginger slices. Refrigerate lemonade at least 1 hour, or until chilled.
-Serve over ice and garnish with lemon slices.

Cucumber Sandwiches
1 (8 oz.) pkg. cream cheese, softened
1/4 cup mayonnaise
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. salt (or to taste)
1/8 tsp. Worcestershire sauce
1/4 tsp. dried dill
36 thin slices of bread (it's best to lightly toast the bread, in my opinion)
1 cucumber, sliced
-Combine the cream cheese, mayo, garlic powder, onion powder, salt and Worcestershire sauce. Spread the mixture on the bread and top with cucumber slices. Sprinkle the cucumber slices with a little salt, pepper and dill.

Egg Salad
6 hard-boiled eggs, cooled and peeled and chopped
1/4 cup mayonnaise (or more, if needed)
1-2 Tbsp. sour cream
1/2 tsp. Dijon mustard
salt and pepper (to taste)
-In a medium-sized bowl, mix all the ingredients together until thoroughly combined. Cover and refrigerate until chilled.
(This recipe is really simple, just the way I like it.)

Chicken Salad

I just boiled the chicken in some chicken broth until it was completely cooked, about 20 minutes. I also decided to shred the chicken instead of dicing it. I used dill instead of tarragon and diced the celery very finely. I also used a little less than a 1/2 tsp. of onion powder instead of scallions.

Butternut Squash and Caramelized Onion Galette

This recipe made 8 mini galettes. Since my galettes were small, I decided to cut the cooled, roasted squash into smaller pieces before I mixed them with the onions. I didn't have fresh sage, so I just lightly sprinkled a little dried, ground sage over the top of the onions and squash before mixing them together. I divided the dough into 8 equal-sized pieces, rolled them into balls, lightly flattened them, and rolled them into 5-inch circles. I put about a tablespoon of filling into the center of the dough, leaving a 1 1/2-inch border. The mini galettes took about 25-30 minutes to bake.

Mini Sweet Potato Cheesecakes

I just used plain, mashed sweet potatoes instead of pumpkin and added a 1/4-cup more sugar and a 1/4 tsp. more cinnamon. Oh, and I didn't use the sour cream topping. That was kinda weird to me.
(This recipe was really good, but I think that I will try another recipe next time or tweak this recipe somehow. I felt that it needed to be a bit smoother and creamier. I probably should have baked these in a water bath.)
