I'm torn between my choices for the contest, I was thinking Pongo and Perdy from 101 Dalmatians - you seem to be adding more kids to the litter with each trip! That was Treyner's first favorite movie! His second birthday was all about the Dalmatians! Bedspreads, toys, cake...I will have to see if I can scan some pics! But I'm going to say Remy from Ratatoiuille - because of your love of cooking and because I think a picture of a big cartoon rat on your tee shirts would look cool ... keep on with the updates!:goodvibes

Honestly - I think most people I have met from England when football (American soccer) and Rugby games are not involved, are more forgiving and polite than anyone in America.

Actually -one of my favorite movies of all time is a Fish Called Wanda and the part where that poor sucker on his bike keeps getting hurt and apologizes for being in the way vs being mad at who hit him! :rotfl2: I could watch that once a month and still laugh like I had never seen it! Awesome lines by an amazing cast!

My contest guess is Fillmore from the movie Cars, because it reminds you of the Booger!?? (also because I googled it cause I couldn't remember his name, and found the description of the character is as follows, and I highlighted in blue the parts that are SO you!):

It came out in 1988 . You need to rent it. English humor at it's finest with a cast to adore including John Cleese, Jamie Lee Curtis, Kevin Kline, Michael Palin...etc. Very Monty Python Esque! Just watched it a few months ago again.

The last 3 pans of cookies I added chocolate chips too. New recipe I found - had no eggs (because I was out) and they turned out pretty good. I will swear by using name brand peanut butter though because the off brand ones do not bring as much flavor to the mix.

1/2 of one of the loaves of banana bread is already gone thanks to Treyner and Dan.

I am not kidding that I have made at least 16 loaves in the past 2 weeks. Kids eat it till it is gone - friends of theirs eat it as soon as they know I have it made.

I need to move south just to have a banana tree!

I should post the recipe. It contains sour cream and is the best I recipe for it ever!

I though - do not want to look at another piece of banana bread for at least 6 months. I can't eat the same thing over and over like the kids do!

Chapter Fifteen: "Chain Gangs and Manta-Fin's"

After striking a pose for a bit on the beach, we traveled the local neighborhoods and saw a ton of houses for sale.

*Is it only me or does it drive anyone else crazy when you see a house for sale and they have no flyers in the tube or letter area where they are supposed to? How do you expect to sell your house with drive by traffic if you have no flyers???*

I noticed that many houses were small, even run down looking and then the back of the house, which almost always backed up to a canal, led to a huge boat and a water view. Obviously the money is put to the water life of the home and not the curb appeal. Many homes were bright colors of turquoise and pink stucco. Then right next door would be a million dollar palace. It did not look like there was any particular developer and home builder that designed the homes in any of the areas.

The fact we were perusing in the booger may have made people think not to take us seriously but, I actually think that is how you can find good deals and the true character of the people selling. I am the same person who drives a bright orange mustang and if you are going to act like "that" person could be your friend but not the "booger" driver well then, you know what you can do with your tude, Mr Rude. :thumbsup2

We came back home and watched a movie and ate pizza rolls and nachos for a late night snack. Truly, glorious time. It is rare as the kids get older to not have anything to do but just enjoy the night and laugh and laugh.

Went to bed and had a great sleep!

The next morning brought on the craptastic weather we had been warned about. Rain and only a high of mid 60's! :scared1: Couple this with the fact the water is already cold meant that Bahia Honda State Park would not be optimal. I had warned the rest of the group that it was going to be cruddy. It was that morning when I learned nobody asks questions on vacation to me. They just assume I am going to make the right decision and so, when I asked on Tuesday, "What do you want to do today? The only thing I absolutely want to do is Bahia Honda State Park and tomorrow it is supposed to rain." They took it that the park was like a walking trail state park and not a beach where you would want sun. Next time, I am going to have to assume they know nothing and over explain everything.

So that morning, with rain and more rain scheduled for the day, I said, "Well let's go, make the best of it and see what there is." The kids balked at the rain and I told them we were going and that was it. :cool2: My one thing and tough bump. I love to snorkel and I was praying the weather people here were as wrong as the one's in Minnesota.:teacher:

Deviled eggs, bacon and fruit were for breakfast.

It was then that the only melt down of the trip happened. More of a coming to God moment of the oldest two kids. The fact is that they all are older and they all have different requests of how they want to be treated by one another and how things that were okay as kids, might not be okay as young adults.

For the most part I stayed out of it. It truly is one of those moments where the kids are now adults and need to learn to communicate and reason and fix their problems. It is also a time when Treyner needs to learn Carsyn is a girl, not just his sister and sometimes she wants to be treated like a girl. Carsyn needed to learn she cannot start the physical poking that siblings do and not expect to get something back and when the person giving you it back is 19, it may be more than what you wanted it to be.

In a nut shell, Carsyn wanted to be treated with kid gloves like a girl but dish out horseplay like a boy and expect no retaliation. You can't have it both ways. It is the first time I saw them actually come to an understanding and use words to express their feelings more than just the typical "screw you" disdain of teen siblings. Treyner apologized for his part and she said she understood how she eggs it on.

My kids are typical in that they play hard, love hard, fight hard and this gave me hope as they get older, that they will not just be the people who get into a fight with their adult sibling and never resolve anything. That they care enough about each other to want a better relationship. I was really proud of Treyner for taking the stance of the oldest and apologizing first and meaning it. I was proud of Carsyn for working on listening to the answer and not just assuming she knew what was going to be said and dismiss things.

Like I said to both of them, "You are different people after this past year. Treyner is an adult, living on his own, making his own choices and has lived in 2 different parts of the country, trying to figure out his path and who he is. Carsyn, you are almost a senior and have grown up a lot. You can drive and are taking on more responsibility for things than when Treyner left. You can't expect to have the exact same relationship as 8 months ago. Figure out a new one."

I also think that a part of Carsyn was jealous that her brother has a new woman in his life. No matter who he has dated, she never felt replaced and although she adores Taylor, the reality is things are changing and that means new people will be coming in and staying in our lives. Carsyn is not one to like change a lot and with Taylor there, it meant less Treyner time for her and she missed her brother a ton. She will never admit that to me of course, but I would bet my life on the fact I am right. I think that morning was as much about making sure she was still important to him as anything else.

After the drama died down and dishes were done, we did go to the park. Ready for rain!

The weather people were not wrong.

It drizzled not down-poured and it was totally empty when we got there. The check in lady explained the snorkel tours were not on unless we could find 8 other people to head out! :mad:

So instead, we took pics and made the best out of it. The kids were good sports and got in the water with me. Dan who is a freeze baby, did not but at least came out and watched. The water is the color a pale turquoise. A gift from God I tell ya.

Then we saw the visitors from the local road crew when not in the pokie, eating lunch in the pavilion.

I am sure the next 20 minutes was entertaining for them because as the boys went into the water, bold enough to snorkel, they jumped out of the water and swore they saw a huge stingray.

Those two goons were swimming around a large, dark object in the water for minutes. Dodging in and out and in and out. Careful not to get too close and standing back up with arms outstretched to show those on the beach (us) and anyone around (chain gang) how big the monster was!

Carsyn then got in the water and took a peak and I walked in as well. Carsyn said it was not a stingray but instead, half of a dolphin carcass and it was mostly eaten. Baylor took another look and agreed from the other side where Carsyn was looking, that it looked like a dolphin head.

I, was a chicken and put my mask in the water, not really wanting to see Flipper shred to bits and not wanting to end my life like Steve Irwin. :littleangel: I could not tell what it was. Baylor, kept trying to look again, frustrated it was now a mystery because, depending of the angle, it also looked like it had moss floating from it.

The boys dubbed it the "Manta-Fin," and "Dolph-Ray." We never did figure out what it was because none of us were brave to touch or get closer than 6 feet away encase it was a stingray! I can only imagine what the chain gang thought of the nutjobs in the Booger who thrashed around in circles for 20 minutes, looking at a rock.

Then we drove and looked at the other side of the park. Carsyn, Treyner and Taylor also went exploring on their own for a bit. Dan, Baylor and I just hung out in the van and it was good to let those 3 have some alone time.

I wish so bad it was nice that day and can't wait to come back again. Hopefully this horrible oil spill will not ruin the beauty there.

What is honey and almond cake? :confused3

It's just a simple honey cake with sliced almonds mixed into the batter, and spread out on top before you put it in the oven. My family loves how it's sweet, but not too sweet.

Haha, it's too bad you never found out what it was. I can't imagine how cold it must've been! I'm waiting for the weather to be perfect beach weather so I can actually play in the water. It's so weird to see a crowded beach, with nobody in the water.

It's great to see that Carsyn and Treyner talked it out. My two younger siblings haven't reached that point yet, and they're 19/18!

Will there be more pictures of the park in the next update?

We then headed back, packed up our place and washed the rest of the clothes. We were leaving in the morning and planned on a some hours on the beach in Vero! If we left early enough, we would have 3-4 hours at Glorious Disney's Vero Beach Resort!

Chocolate-Dipped Key Lime Pie

This is very popular in Key West. There they sell slices of frozen key lime pie on a stick, dipped in chocolate, which you could certainly make at home. Chocolate is a perfect complement to the tart lime.

Use either slices of Frozen Key Lime Pie or freeze the filling by itself and cut into wedges or squares.

1. Stick a popsicle stick (available at craft stores) into the short side of a slice of frozen key lime pie.
2. Melt your favorite naturally-sweetened chocolate bar or chocolate chips in the top of a double boiler.
3. Dip slices of pie into the chocolate, and place on a sheet of parchment paper or silicone baking mat on a baking sheet.
4. Freeze until chocolate sets, then wrap each bar individually in parchment paper and store in the freezer.





and - a fantastic Key Lime recipe of mine if you want o make one and then make it into frozen chocolate goodness!!

Ingredients
For the crust:
1- 1/2 cups graham cracker crumbs (10 crackers)
1/4 cup sugar
6 tablespoons (3/4 stick) unsalted butter, melted

**** I think the crust comes out more even and thicker by using 1 1/2 of this crust mix recipe.



For the filling:
6 extra-large egg yolks, at room temperature
1/4 cup sugar
1 (14-ounce) can sweetened condensed milk
2 tablespoons grated lime zest
3/4 cup freshly squeezed lime juice (4 to 5 limes)

{note: I use closer to 1 or 1.5 tablespoons of zest, and I find that you need closer to 8 to 10 limes to get 3/4 cup of lime juice.}

For the decoration:
1 cup (1/2 pint) cold heavy cream
1/4 cup sugar
1/4 teaspoon pure vanilla extract
Thin lime wedges

(I use Mexican vanilla extract & cut key limes into thin slices instead of regular lime wedges. I have made it with Key Limes and regular limes BTW!)

Directions
Preheat the oven to 350 degrees F.

For the crust, combine the graham cracker crumbs, sugar, and butter in a bowl. Press into a 9-inch pie pan, making sure the sides and the bottom are an even thickness. Bake for 10 minutes. Allow to cool completely.

For the filling, beat the egg yolks and sugar on high speed in the bowl of an electric mixer fitted with a paddle attachment for 5 minutes, until thick {note: I use a regular hand-held mixer}. With the mixer on medium speed, add the condensed milk, lime zest, and lime juice. Pour into the baked pie shell and freeze.

For the decoration, beat the heavy cream on high speed in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and beat until firm. Spoon or pipe decoratively onto the pie and decorate with lime. Freeze for several hours or overnight.

***note: This pie needs at least 8 hours to really freeze, so I suggest making 24 hours in advance. Also, while you're at it, suggest making two pies at one time. Just double the recipe then serve one for the next day, and keep the other in your freezer for future snacking. It keeps in the freezer well for up to a month, and pretty good up to two months.)
